It was really incredibly easy and tasty that my family asked me to make these ribs 3 times just this week.

They loved the crispiness of the ribs and the fact that they are so juicy as well as tender.

I feel like this is the best invention ever. To be perfectly honest with you all, I was one of those skeptical people. I used a conventional oven in the past and loved it.

However, in the case of air fryer, we are talking about a kitchen gadget that is similar to the conventional oven yet so different. Absolutely amazing!

With that being said, I might be just a bit in love with my air fryer. We have been using it literally every single day since my husband decided to surprise me.

Some things we made are pizza, bacon, boiled eggs, fish, fries, wings as well as fish sticks, burgers, etc. Yes, we are killing it here with the air fryer.

My Anna tested making cookies and somewhat healthy energy bars in the air fryer. Even biscuits came out sort of tasty. Okay, I might be just a little excited so I keep blabbering but I am being honest.

  • 1 tbsp. Liquid Smoke
  • 1 tbsp. Oil
  • Seasoning:
  •  2 teaspoons Kosher Salt
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Chili powder
  •  1 teaspoon Onion powder
  •  ½ teaspoon Garlic powder
  •  ½ teaspoon Brown Sugar (add low carb sugar if you are keto such as Truvia Brown Sugar Blend)

Instructions

  1. Pat the ribs dry with kitchen paper towel then rub all over oil and liquid smoke.
  2. Mix all the ingredients for seasoning together. Season the ribs with the spices.
  3. Cut the rack of ribs into sections 4-5 ribs to fit the air fryer.
  4. Cook the ribs in the air fryer for 20 minutes at 400 degrees Fahrenheit, depending on the rib thickens.
  5. After the ribs are done, you may brush some BBQ sauce and pop in the air fryer for 5 more minutes, but it is not necessary. I like brushing just the leftover drippings for more flavorful ribs.

Notes

You can make this Low carb and Keto friendly just by switching a few things. For example, adding low carb sugar. Yes, you may add regular brown sugar as well. It is all about meeting your diet. We are doing low carb so that is why I mention that.

Mashed potatoes are my favorite. Now to think of it, I really love all the potato dishes. There is not even one potato dish that I do not like.

However, mashed potatoes got my heart. I simply can’t resist it. I could eat mashed potatoes for breakfast, lunch, and dinner.

Okay, maybe not breakfast, but I have before during my crazy teenage years when I get back from the party early in the morning or too late.

Take it however you want (haha) and there are leftovers in the kitchen. I saved my hungry belly many times eating cold mashed potatoes.

Creamy Garlic Mashed Potatoes

To move on to another story. We started to renovate our kitchen. Yey! The weekend project turned out in a 4-day long thing, but it is finally getting complete. I couldn’t be happier with the results.

It’s quite a process that I will share on my blog how we did it, but before I post anything, we are going to paint the walls.

I wanted a French – country-old farm house-shabby chic feel, with a modern twist, and I think we achieved it.

It was definitely teamwork, but to be honest, I am so tired that every bone in my body hurts from standing, lifting, and painting. But, it was totally worth it.

Recipe

Now let’s get those mashed potatoes ready for cooking. Please read the notes below in the recipe section.

Creamy Garlic Mashed Potatoes with Brown Butter
Yield: Serves 6

Creamy Garlic Mashed Potatoes with Brown Butter

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Easy, delicious and so good. These are one of the best-mashed potatoes.

Ingredients

  • 1/3 to 1/2 pounds of potatoes per person, I used about 2 kg
  • Water to cover over the potatoes
  • 1/2 tbsp. salt or to taste
  • 2-3 tablespoons unsalted butter
  • 1/2 cup Milk
  • 1/2 cup Cream/Half and Half/or Heavy Whipped Cream -works fine too.
  • 1 teaspoon Garlic powder
  • 1 teaspoon dry parsley
  • Salt to taste about 1 teaspoon

Topping

  • Dash of dried parsley
  • Dash of dried sage
  • 2 tablespoons garlic and herbs butter

Instructions

  1. Peel the potatoes, wash and quarter into equal size.
  2. Put the potatoes into a large pot, and pour cold water.
  3. Add 1 tablespoon of salt, and cover.
  4. Boil the potatoes over medium-high heat and cook until the potatoes are tender about 25 minutes.
  5. Drain well, and transfer to a large mixing bowl.
  6. Add cream and milk, unsalted butter, then dry parsley, garlic powder, and salt. (Taste later to see if you need more salt).
  7. Using electric mixer start with low speed, mix potatoes. Increase the mixer's speed as the potatoes getting smoother. Mix until they are completely lumped free.

Topping:

  1. In the skillet or a frying pan add garlic and herb butter (If unavailable, season unsalted butter with garlic and herbs), add a dash of dried parsley and dried sage. Allow it to melt on the medium heat.
  2. When the butter starts to brown after a minute or two, take it off and drizzle over the mashed potatoes.

Notes

You can use large potatoes as I used, or smaller, just make sure you have enough- about 2 kg/4.4 lbs for approximately 6 adults. If you have more people, just add splash more cream and butter.

Of course, add Salt TO TASTE. Start with a few pinches if it's not salty enough and work from there. On the other note, if you have fewer people, just add less milk and cream. You can use red potatoes, with skin if you want to stay a bit healthier and use low-fat buttermilk -just an idea.

Salmon and Vegetables Sheet Pan Dinner

Salmon and Vegetables Sheet Pan Dinner

Salmon and Vegetables Sheet Pan Dinner

Salmon and Vegetables Sheet Pan Dinner is the best. Not only that you can mix and match vegetables, but it is all year round kind of meal. Don’t you agree?

One of our favorite fish is salmon. We just love salmon made any way possible; smoked, grilled, poached, baked. It is amazing in baked dishes or sandwiches.

What is your favorite fish?

On the other hand, sheet pan dinner is just phenomenal. You can add chicken, sausage, beef, pork or any other fish. Also, it is fantastic to clean your fridge day when you do not have so much food, but it has to be used.

I have made this dish many times and the best way to not overcook fish was to actually wrap it in foil. If you hate relationship with Alum foil then just use parchment paper.

I cooked it at the same temperature and pulled salmon 10 minutes earlier so it ended up cooking in the foil before serving. It was absolutely divine!

Yes, you can absolutely bake fish on top of your veggies but I found this way tastier.

Salmon and Vegetables Sheet Pan Dinner

Salmon and Vegetables Sheet Pan Dinner
Yield: 4 Servings

Salmon and Vegetables Sheet Pan Dinner

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

Easy, Delicious and a perfect family dinner.

Ingredients

  • 1- 1 1/2 pound Salmon Fillet, defrosted (Wild Alaskan)
  • Kosher Salt a good pinch or two, rub on the salmon
  • 1-2 teaspoon ground black Pepper
  • Lemon slices from 1 lemon
  • 1 teasoon dried Oregano
  • 5 tablespooms of Garlic-Herb Butter (if available)

Vegetables

  • 1 pound New Potatoes, I used red
  • 1/2 pound Green Beans
  • 1/2 pound Baby Carrots
  • 1 pound Broccoli, I used frozen florets
  • Olive Oil
  • Salt and Black Pepper, to taste
  • 4-5 Garlic cloves
  • 1 teaspoon dried Parsley
  • 1 teaspoon dried Oregano

Instructions

  1. Preheat over to 375F

SALMON:

  1. Defrost salmon, and take it out of the pack. Take a large heavy-duty aluminum foil or parchment paper and then, season salmon with salt, pepper, herbs. Rub on both sides well, then place the sliced lemon on each slice of salmon and a tablespoon of butter. Wrap nicely and prep vegetables.
  2. Place Salmon to bake at the same time you will bake vegetables.
  3. Make sure to take it out after 25 minutes. That way salmon will not overcook. It will continue cooking in the foil until it is ready to be served. So do not open it until you are ready to eat or until vegetables are ready.

SHEET PAN VEGETABLES:

  1. Wash Potatoes and either cut them in half or the quarters.
  2. Season each vegetable with salt, pepper, and herbs, then place each vegetable next to each other but do not overcrowd the sheet pan. Make sure it is somewhat in one layer.
  3. Drizzle with olive oil and bake for 40 minutes in 375F preheated oven.
  4. If the potatoes need a bit more time to cook, then remove all the other vegetables and allow potatoes to cook additional 2-3 minutes under the broiler (medium temp).

Notes

You may use any vegetables that you have or are in season; Cauliflower, asparagus, peppers, cherry tomatoes, etc. Possibilities are endless

You may cook vegetables in the air fryer, but potatoes might take a bit more time to crisp up.

If you do not have garlic and herbs butter available, then just add a pinch more salt, add more dried parsley and a teaspoon or two of garlic powder, that's it!
