It is finally getting warmer, and I thought what better way to celebrate this beautiful Spring weather than this Thai Chili Grilled Chicken. I just love anything grilled, and all the greens around that beautiful golden make me smile.

Of course, I added a nectarine that I grilled just for a bit and serve it with asparagus too.  It is one delightful meal that anyone can enjoy.

Thai Chili Grilled Chicken with Salad

As for the dressing, if you are following me, then you must know that I love simple dressings that contain oil, lemon, herbs, and salt.

Well, It is vinaigrette if you ask me. It’s amazingly refreshing that way and goes so well with grilled chicken and sweet nectarine.

Thai Chili Grilled Chicken with Salad
Yield: Serves 2

Thai Chili Grilled Chicken with Salad

Prep Time: 10 minutes
Grill Time: 12 minutes
Marinate Time: 15 minutes
Total Time: 37 minutes

Easy and Delicious Thai Chili Grilled Chicken over tasty salad

Ingredients

  • 1 chicken breast split in half
  • 1 tablespoon oil + brushing on the grill pan if you are using a grill pan
  • 1 tablespoon Lime juice
  • 1 tablespoon Thai Chili Seasoning
  • 1/2 teaspoon dry parsley
  • Pinch of Himalayan Salt
  • Pinch of Ground Black pepper
  • SALAD
  • 1 cups Mixed greens any on hand
  • 1/2 cup baby Spinach
  • 1 nectarine split in half and grilled
  • VINAIGRETTE
  • Juice of 1/2 lemon you may add more if you prefer sourer
  • 2 tablespoons Olive Oil
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon dried parsley
  • Salt and ground black pepper to taste
  • GARNISH
  • Parsley
  • Sesame seeds

Instructions

  1. Heat the grill pan, or outside grill.
  2. Cut the fat off the chicken, if any, and season it with oil, lime juice, Thai seasoning, dried parsley, salt, and ground black pepper. You do not need much salt just a pinch because Thai seasoning already contains sodium. Rub on both sides and allow it to marinate for about 10 minutes and/or until the grill pan is ready. You may marinate it for up to an hour, but make sure to place in the fridge after 15 minutes.
  3. Brush a bit of oil on the grill pan and lower the Temperature to medium.
  4. Place chicken on the top and allow it to cook for 5 minutes on one side before flipping on the other. Press a bit so you get those grill marks. Cooking time on direct fire is about 5 to 6 minutes, per side, for the boneless chicken breast and internal temperature should be between 160° and 165° F, now for the grill pan, I would say cook it until you reach that internal temperature or for about 15 minutes altogether. flipping a couple of times until it is cooked through. If the chicken is thick you may slice it in half or cook longer. When it is cooked, place it on the kitchen paper towel and allow it to rest for at least 5 minutes so the juices could stay in and you won't end up with dry chicken.
  5. Wash and slice nectarine and place just a couple of minutes before a chicken is done. You can also grill asparagus or any other vegetables that you prefer of have, like mushrooms or peppers.
  6. Combine dressing or vinaigrette by mixing it together and drizzling it over the greens. You do not have to use it all, so you may place it in the jar with a lid and keep it in the fridge.
  7. Serve the grilled chicken with mixed greens on the side and place on each plate a half of the nectarine.

Chicken Fajita Skewers are fresh, tasty, healthy, colorful, and the ultimate summer grilled food that everyone loves. My family loves it especially with a bowl of Spanish rice and beans.

To lighten up my recipe, I used a mixture of oil with lime juice and my own herbs and spices to marinate chicken.

The combination of this extravagant oil and delectable chicken definitely called for a family cookout!

The oil provided a rich, tender taste that left all of our mouths watering before we could dive into the meal. When serving this meal you and your family are guaranteed to never be left disappointed. It is really that good!

Skewers

The dish is pretty amazing and we did not step away too far from the authenticity. However, to lighten up my recipe, I used skewers instead of serving it traditionally in tortillas.

You can use any oil that you prefer, which was fantastic. The oil keeps chicken moist and juicy while grilling. Also, I love using my own spice and herb blend for his chicken fajita instead of the store-bought.

I believe it is much healthier, plus you are in control of which herb and spice you are going to use. That makes sense, right?

So, this summer I have decided to share with you the best of my recipes from the grill. It is my absolute favorite way of cooking so I cannot wait to share!

Chicken Fajita Skewers

Chicken Fajita Skewers

Ingredients

  • 3 tablespoons (42 g) oil
  • Juice of 1 lime, preferably ripe
  • 1 tablespoon chopped cilantro or flat-leaf parsley
  • 3 pounds (1.3 kg) chicken breast, cubed (approximately 3 whole chicken breast)
  • 1 green bell pepper, chopped into bite-sized chunks
  • 1 red bell pepper, chopped into bite-sized chunks
  • 1 red bell pepper, chopped into bite-sized chunks
  • 1 orange bell pepper, chopped into bite-sized chunks
  • 1/2 large red onion, chopped into bite-sized chunks

FAJITA SEASONING

  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Instructions

  1. Combine the seasoning and set aside. Now, mix together oil and lemon juice.
  2. Cut chicken with a sharp knife into approximately the same bite-size pieces as cubes, then rub seasoning all over. Drizzle oil and lemon juice mixture over seasoned chicken and massage it. Cover and place the chicken in the fridge and allow to marinate for about 30 minutes.
  3. Thread the marinated chicken onto the skewers with the peppers and onions. There is no right and wrong, I just like to mix it up, so the skewers look colorful and pretty. Place back in the marinade and allow to marinate until you are ready to cook.
  4. Cook the chicken fajita skewers on the grill for about 20-25 minutes. Turn and brush with oil every 10 minutes, or until chicken juices run clear. Allow it to rest for a few minutes.
  5. Serve with rice and beans, tortillas, and salad.

Notes

You may use beef for this as well. I recommend my seasoning recipe, but you may use store-bought too. In the case, you are using store-bought, just add cilantro or parsley, corn oil, and lime juice for extra tasty and tender chicken skewers.

You may use fajita sauce and drizzle over the skewers to keep the chicken juicy.

Yes, you are allowed to drool. The took only a few shots because my hunger struck like a lightning in the middle of the summer. I had to move fast, otherwise, I would not guarantee anyone’s safety around me at that moment.

Spring break is here, my boy is back from his band trip and all three are home for the next 2 weeks. Woohoo! Right!!!

My stress level is… Alright, for now! I’ve been making their favorite meals, I listen to their stories, we are having fun so far. I sing as loud as I can to keep them out of my office when I am working… And it is working!

Burgers with Caramelized Onions

You see, I am a night owl, and a zombie when I wake up in the morning. In all seriousness, I need to train myself to sleep longer than 4 hours in one piece, which again is incredibly hard.

I took my time last week and updated my about page and a few older posts, made a gazillion pictures, which I did not share yet, but overall I have enjoyed my social media free time.

Yield: 4 to 6 Patties

Burgers with Caramelized Onions

Prep Time: 10 minutes
Grill Time : 6 minutes
Marinade Time: 8 hours
Total Time: 8 hours 16 minutes

Easy and tasty Burgers with Caramelized Onions.

Ingredients

  • BURGER MIXTURE:
  • 1 Pounds (16 ounces/453g) Ground Angus Beef/80% lean-20% Fat
  • 1/2 Medium Yellow Onion, minced or shredded
  • 2 teaspoon Ground Black Pepper
  • Salt to taste, approximately 1/2-1 teaspoon
  • 1/4 teaspoon Baking Soda
  • 1 Egg, mixed
  • 1 tablespoon Plain Bread Crumbs
  • 1 Tablespoon Oil
  • TOPPING OPTION:
  • Easy Caramelized Onions (links below)
  • Sliced Cheese
  • Crispy Bacon
  • Kosher Dill Pickles
  • Lettuce, Tomatoes
  • Ketchup, Mustard. Mayo

Instructions

  1. In a medium sized bowl combine first baking soda, egg and bread crumbs and mix well. Then add to the rest of the burger ingredients for the burger, mix with your hands to incorporate (use gloves if you do not like to touch the meat).
  2. Cover with the wrap and put in the fridge for at least 2 hours, but the best taste is if you leave the meat to marinate for about 8 hours. Make sure it is completely covered and in the fridge.
  3. Take fist size meatball and make patties. Cover and put on the side until ready for grilling, you can also pan fry them or use an indoor grill.
  4. Preheat the grill, outdoor or indoor and pour about 1/2 tablespoon of Oil in the plate and dip your fingers into it, take each patty and pat with your oily fingers before placing it on the grill. 
  5. Grill on both sides according to your preferences, approximately 3-5 minutes per side, depending on how big your patties are. 
  6. Last, but not least build your burger, however you like and prefer. 

Notes

  • The burger/meat mixture is my own recipe and I have been using it for many years.
  • Add whatever you wish in your burger.
  • Baking Soda helps tenderize the meat and keep them juice. You do not have to add them, but this is my method that I have been using for years.
