Classic Pancakes Recipe

Easy and delicious Classic Pancakes for breakfast, brunch or any time you crave them.

Warm, buttery and sweet smell flow through the air as hot pancakes are lifted from the pan. Butter is slowly sliding down the pancakes, leaving a light yellow trail behind it.

The coolness of the syrup and heat of the classic pancake complemented one another perfectly and simply served to bring out the subtle flavor of the pancake itself.

Classic Pancakes

A thick coat of sweet maple syrup covering pancakes like a delightful tasty blanket that makes your mouth water with each bite. Mhmm!!!

A burst of raspberry gives even more refreshing flavor as it reaches your taste buds. I think any fruit would be perfect, but there is something about raspberry on pancakes. Just gives you a nice flavor.

Well, I adore raspberries so I dink my tea from it almost every single day but, yes, you may use any berry or fruit.

Anyhow, we just love pancakes. However, if I could I would eat them probably every single day. I have an issue with carbs, but that is just ’cause I love them too much.

Well, they are not sitting well with my stomach, so I try to make pancakes or waffles with almond flour. Although, I do treat myself with these every once in a while.

Classic Pancakes
Yield: SERVES 4

Classic Pancakes

Either way, you call them; Pancakes, Hotcakes or American pancakes, these are fluffy and delicious and they certainly make one amazing start of the day.

Ingredients

  • 2 cups All-Purpose Flour
  • 2 3/4 teaspoons Baking Powder
  • 1/2 teaspoon Coarse Salt
  • 1 tablespoon Sugar
  • 2 large Eggs lightly beaten
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Unsalted Butter melted plus more for serving
  • 1 1/4 cups Milk
  • Vegetable Oil for greasing
  • Serve it with:
  • Unsalted Butter
  • Maple syrup
  • Jam
  • Fruit

Instructions

  1. Place a heat-proof serving platter into a warm oven, tuned to 200°F
  2. Heat a griddle/skillet/nonstick pan over low-medium heat.
  3. In a large bowl, add the flour, baking powder, salt, and sugar and whisk to combine.
  4. In another bowl mix wet ingredients; eggs, vanilla, melted unsalted butter, and milk. Add wet mixture to the dry mixture and mix until just combined. It is alright it the better is a bit lumpy.
  5. Brush nonstick saute pan or the griddle with oil or butter and drop about 1/3 cup or for large pancakes 1/2 cup of the batter on the hot griddle/skillet/nonstick pan. Allow pancakes to cook until golden brown and bubbles begin to form on the surface. Flip and continue to cook until golden on the second side and cooked through, about a minute or two per side.
  6. As the pancakes come out of the griddle/skillet/nonstick pan, place them on the warm platter in the oven until ready to serve.
  7. Repeat with the remaining batter. Serve with butter, warm maple syrup and fruit.

You might call them pancakes, hotcakes, flapjacks or skillet cakes. I must say, they all taste the same it just depends on what region of the country you live in.

If your mama calls them pancakes, then most likely you will stick with that name for the rest of your life. Since the mother’s day is approaching, I thought to celebrate it just a little bit early. So I wanted to present delicious, and healthier pancakes.

I added in the batter whole ground flaxseed meal. I wish I could have these pancakes every morning for breakfast, preferably “breakfast in bed”.

Blackberry Flax Pancakes

Hey, this is coming from a person who eats early breakfast ones in a blue moon, meaning rarely. These pancakes are sweet, soft, fluffy, with a slight hint of lemon zest and sweet burst from juicy blackberries. Perfect food to serve on Mother’s Day.

However, this is not all. I paired these yummy pancakes with Vanilla Soy Cafe Latte, and of course, the recipe for the simplest latte is included in this post too. 

Vanilla Soy Caffe Latte with pancakes

Blackberry Flax Pancakes

Ingredients

  • 1 1/2 cups all-purpose flour spooned and leveled
  • 1/4 cup whole ground flaxseed meal
  • 2 1/2 Tbs. Sugar
  • 1/4 tsp. Baking soda
  • 1 1/4 tsp. Baking powder
  • 1/4 tsp. Salt
  • 1 1/2 cups buttermilk
  • 1 large egg lightly beaten
  • 1 Tbsp Unsalted Butter melted- plus more for skillet and serving
  • 1 cup fresh or Frozen Blackberries I used fresh
  • 1 Tbsp Lemon Juice, plus Zest from 1/2 of the lemon
  • Maple syrup or jam, for serving

Instructions

  1. In a large bowl, whisk together flour, flaxseed meal, sugar, baking soda, baking powder, and salt. Add buttermilk, egg, and butter and whisk until just moistened (batter should have some lumps, but do not over-mix).
  2. Cut the fresh blackberries in quarters if possible and fold them in the batter; Add lemon juice and lemon zest and mix by folding the batter again.
  3. Coat a large nonstick skillet, pan or a griddle with butter and heat should be just a bit over medium-low.
  4. In batches, drop batter by 1/4 cupfuls into skillet.
  5. Cook until bubbles appear on top and a few have burst, 2 to 5 minutes. Flip pancakes and cook until golden brown, 2 to 5 minutes.
  6. Repeat with more butter and remaining batter (makes about 12), wiping skillet clean between batches and lowering heat if necessary.
  7. Serve HOT with butter and syrup or jam and fresh blackberries on the side.

Vanilla Soy Caffè Latte

Ingredients

  • 6 oz Vanilla Soy Dream Milk
  • 1 tablespoon Instant NESCAFÉ dark roast
  • Sweeter of your choice or a shot of Vanilla Syrup for coffee

Instructions

  1. Place the milk in double boiler and create froth (foam), rose to the tip just below the surface of the pot. -Be close by! I used to see through lid so I can see when the froth is rising.
  2. Add Instant coffee in the cup with sweeter and pour hot milk in the cup.

Recipe Notes

Soy milk is not steaming like regular milk, the froth is different if you are to compare to regular milk latte. This is just in case if you see it’s not bubbling like you are used to seeing.

If you have equipment right for steaming milk go ahead and skip the recipe and do it your way.

Well, I have a variety of comfort foods that I savor, including these palatable noodles.

I absolutely adore the combination of shrimps and noodles; Toss in some extraordinary, mouth-watering Thai sauce, and I will, for sure, dive right into the platter without question.

Furthermore, I have a certain fondness toward food and love it, and I am not reluctant to say so.

We briskly consumed this with pleasure until the whole entire wok was completely devoured.

At that moment, my husband passionately declared that I must make this dish weekly.

Shrimp Pad Thai

Since I am now on the Keto Diet, it is exceedingly difficult for me to prepare my favorite foods for my family. 

Every few hours, I do not fail to smell the pleasant and sweet aroma of pancakes with warm buttery maple syrup drizzled on top or begin to daydream of a delicious sandwich.

One of the most strenuous meals to resist are these appetizing noodles. 

I continue to stick with the diet through all of the strain and struggle because I have a goal and a purpose for why I am doing Keto, and truly wish to complete what I feel is only necessary for the bettering of myself.

Easy and tasty shrimp noodles

Ingredients

  • 1 pack uncooked flat rice Pad Thai noodles more if you want more noodles on the side, Thai Kitchen got kits with 9oz Box
  • 2 large Eggs Scrambled
  • 3 tablespoons Oil
  • 3-4 Garlic cloves finely minced or sliced
  • 1/2 teaspoon Ginger minced
  • Large to jumbo about 5 to 7 shrimp per person, peeled and deveined large shrimp
  • 2-3 Oyster Mushrooms roughly chop
  • 1 tablespoon lower-sodium Soy Sauce
  • 1 tablespoon Thai Fish sauce
  • 1 tablespoon fresh Lime juice
  • 3 tablespoons Pad Thai Sauce or make your own
  • 1 cup fresh Bean Sprouts
  • 1/4 cup chopped unsalted dry-roasted peanuts

GARNISH

  • 1/4 Bunch Cilantro or Parsley
  • 5-6 leaves fresh basil chopped
  • 2-3 Green Onion chopped

Instructions

  1. Cook noodles according to package directions; drain. 
  2. Mix eggs then cook over medium-low heat. When you finish scrambled eggs, set aside. You will add scrambled eggs at the end. You may also add a pinch of salt if you prefer. 
  3. While water comes to a boil, cook shrimps in the wok or a pan on the medium-high heat.
  4. Add oil to pan; swirl to coat. Add shrimp, garlic and ginger; stir-fry 2 minutes or until shrimp is almost done. Add Oyster mushrooms (read notes)Add cooked noodles; toss to combine. Stir in 1 tablespoon lower-sodium Soy Sauce, 1 tablespoon Thai Fish sauce,1 tablespoon fresh Lime juice and 3 about tablespoons Pad Thai Sauce; Cook for about 1 minute, stirring constantly to combine and marry the flavors. Lastly, add peanuts and bean sprouts, and mix in scrambled eggs. 
  5. Arrange about 1 cup noodle mixture on each plate, and garnish with fresh basil and green onions, parsley or cilantro. 

Notes

You may add other vegetables such as peppers, peas, sugar snap peas, carrots, etc.

Mushrooms are optional. I had some oyster mushrooms which complemented this dish very well, however, you can use any mushroom or don't use it at all.
