New Orleans, a city in Louisiana, is well known for its unique music, tasty Creole food, and peculiar dialects. As well as annual celebrations and festivals, most notably Mardi Gras, but it is also well known for its wonderful beignets.

These light and airy deep-fried pastries have a crispy outside and a fluffy, soft inside. Additionally, they are often created with a simple dough made from flour, eggs, sugar, water, yeast, and salt.

So, after the dough is flattened out and cut into squares, the dough is deep-fried until it turns golden brown. Usually accompanied by a cup of café au lait or in translation coffee with milk, beignets are served hot and coated with powdered sugar.

Though they can be eaten at any time of day, breakfast is when beignets are most frequently consumed. My family is crazy for these, and they usually eat them with the addition of Nutella. I know it is not the healthier option but they love it!

They are a fundamental element of New Orleans culture and are frequently connected to the city’s renowned French Quarter.

The renowned coffee shop Café Du Monde, which has been serving the pastries since 1862, is one of the most well-known locations in New Orleans to eat Beignets.

The Morning Call Coffee Stand, a well-liked location that has been running in City Park since 1870, is another well-known location.

Classic Beignets

Prep Time: 20 minutes
Cook Time: 15 minutes
Additional Waiting Time: 1 day
Total Time: 20 minutes

These light and airy deep-fried pastries have a crispy outside and a fluffy, soft inside. They are often created with a simple dough made from flour, eggs, sugar, water, yeast, and salt.

Ingredients

Dough

  • 4 cups (480g) Unbleached All-Purpose Flour
  • 1 envelope instant yeast
  • 1 cup (226ml) milk, lukewarm
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 large egg, lightly beaten
  • 1/4 cup (50g) granulated sugar
  • 2 teaspoons (12g) salt

Topping:

  • Powdered Sugar

Instructions

Dough

  1. By hand, or in a stand mixer, combine all of the ingredients and knead them until you create a soft, smooth dough.
  2. Let the dough rise for an hour at room temperature under cover or until it is puffy.
  3. Deflate the mixture and put it in a well-greased bowl, making sure to pick a container that will let the dough expand. Make sure to keep it in the fridge for 24 hours and up to two days (48 hrs.), covered.
  4. After that resting process, the dough should be taken out of the refrigerator and placed on a surface that has been lightly floured or greased so that it can come up to room temperature.
  5. The next step is to roll it into approximately a 14" x 10" rectangle, rounding up the corners as much as possible. Divide the dough into approx. 2" squares.

Frying:

  1. In a deep, heavy-bottomed 10" frying pan, pour the oil up to 3/4" of the pan.
  2. When the oil reaches 360°F, place 5 or 6 dough squares into the heated oil without overcrowding the pan. They will drop to the bottom before rising to the top after around five to six seconds.
  3. The beignets should be fried for one minute before being turned over. Fry the beignets for one more minute, or until they are puffy and evenly golden brown.
  4. Place each of them on a paper towel. When you are done frying, lightly dust with powdered sugar and serve hot with coffee or tea.

Notes

You can dip them in the chocolate too. You can also serve them with Nutella or jam.

Other equipment needed:

  • Deep Frying Pan (about 10")
  • Deep-fry/Candy Thermometer
  • Oil for frying
  • Paper Towel
  • Fine-mesh strainer, which is perfect for dusting powdered sugar.
