Mushroom Frittata, easy, and simple satisfying meal. You can have it for breakfast or dinner. We had it even on lazy Sundays when we feel like staying in a PJ all day.

This past week was the toughest week that we had in a long time, to say the least. Maybe, because it was a Halloween week. I am very superstitious.

Anyhow, we learn to move on and continue with our lives. One thing that made my day was that I got a beautiful care package from one of my followers.

It made me smile and a bit emotional. To even think that sometimes people that you never met in your life could brighten your day, and make it so much better.

My hubs, Nebs is like that. When I am feeling down, he disappears and then brings my favorite treats to cheer me up: creamy pie, a box of chocolates, or my favorite latte, etc. 

Mushroom Frittata

So, before the weekend, my Nebs went to get groceries with the kids. The worst idea ever!

Well, he brought home over 10 packs of mushrooms. Different kinds of mushrooms.

I just stood in the kitchen as he was taking out a pack after pack, and I was in shock, thinking what in hell am I going to do with all these mushrooms?

Please do not get me wrong, I love mushrooms, and if you have not heard before they are really healthy. However, we are talking about over 10 packs of mushrooms!

Brunch Recipe

Anyhow, I have been making each day something with them, and I think I might freeze a few packs because to be quite frank, even I can get tired of eating them.

One of the dishes that I made was this mushroom frittata. It looks so beautiful. I love frittatas.

If you did not know a frittata is an Italian version of Omelette. It is so versatile and always comes out delicious, no matter what you are using.

Seriously, if you do not have pancetta, Italian bacon made of pork belly, use hickory-smoked bacon or turkey bacon, smoked ham, etc.

Mushroom Frittata

If you do not eat pork at all, then maybe you can substitute it with grilled chicken or just make it with veggies. See, there are so many variations of making a frittata.

Let us be real, besides being so beautiful and delicious, you can serve it any time of the day, from breakfast to dinner. I think that’s a win-win.

Mushroom Frittata

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

If you did not know a frittata is an Italian version of Omelette. It is so versatile and always comes out delicious, no matter what you are using. Be creative!

Ingredients

  • 1 tbsp. Oil or unsalted butter
  • 1/2 cup Italian Pancetta cubed into small cubes (about 100g)
  • 1 lb. 453g. Baby Bella mushrooms, or any other/sliced
  • 2-3 Green onions sliced (reserve a bit for the green part for garnish)
  • 2-3 Stems of Fresh Thyme remove leaves, or 1/2 teaspoon or dry. + more for garnish.
  • Pinch of salt
  • Pinch of Chili Flakes
  • 6 large eggs
  • 1/2 cup 125ml Milk
  • Salt and Flakes Pinch
  • 1/2 cup 118g grated Parmesan cheese

Instructions

  1. Heat a skillet, until almost smoking point. Add oil.
  2. Then, add Pancetta. Saute for a few seconds, and add sliced mushrooms.
  3. Add sliced scallions (green onions), Stir. /Reserve some green part of scallions for garnish.
  4. Add salt and crushed chili flakes, following fresh or dry thyme.
  5. Allow mushrooms to cook for about 10-12 minutes on medium-low heat.
  6. While mushrooms are cooking, mix eggs until they are combined, then pour milk, a pinch of salt, red chili flakes, and Parmesan cheese. Mix the egg miniature with all the ingredients until well combined.
  7. Pour the egg mixture over the mushrooms, and let it cook for a couple of minutes on the stove top.
  8. Meanwhile, preheat oven to 400F/200C/ Gas Mark 6.
  9. Place frittata skillet in the oven and bake for 15-18 minutes, or until the frittata is golden and starts to puff up.
  10. Garnish mushroom frittata with those reserved green parts of scallions. Serve immediately!

Notes

Dry herbs are always more powerful, so I double or even triple the amount when I use fresh, You can use cheese on tops such as mozzarella, provolone, pizza cheese combo or even Mexican cheese.

Melting cheeses. It always tastes better with some cheese on top. Keep an eye when it is baking. No need to open up the oven, just turn on the lights and peek through. It should be done between 15 and 20 minutes. It will puff up. I like mine to be a deeper golden color rather than pale, so just bake depending on how you like it.

We all know that General Tso’s is probably the most well known Asian fried chicken recipe of all, but you must give this one a go.

Also, you must use extra firm or at least firm tofu for this dish.

Softer types of tofu are usually used in soups and stews, although I like to squeeze in firm tofu in my soups as well.

So, the taste of this is a bit sweet, hardly spicy and a whole lot of delicious. It smacks your lips delicious, that is. I have a feeling that you love it.

General Tso's Tofu Recipe

General Tso's Tofu

General Tso's Tofu recipe is easy and so tasty. Simple meatless dishes always hit the spot.

Ingredients

Tofu:

  • 1 block extra-firm organic tofu
  • 1 tablespoon sesame seeds oil
  • 1/4 cup soy sauce
  • 3 tablespoons cornstarch
  • 2 tablespoons oil

Sauce:

  • 1 cup chicken broth (alt. vegetable broth for vegetarians)
  • 1/2 tablespoon tomato paste
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sriracha
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 2 tablespoons cornstarch (mixed with 2 tablespoons water)/ you can use any other sauce thickener.

Garnish:

  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • A drizzle of sesame oil

Instructions

  1. Take the tofu out of the container and press the whole block between two plates lined with paper towels and top the whole setup with a heavy can. If you have a TOFU press that is helpful as well. This will press out excess moisture from the tofu and make adding flavor easier. Also, pressed tofu absorbs liquids like soy sauce marinate that we are using much better.. Slice or cube the tofu after pressing.
  2. Combine soy sauce and sesame oil together and add over the cubed tofu. Allow it to marinate for 10 to 15 minutes. Try to turn it a few times so it coats every side.
  3. Coat the tofu in starch before frying. The alternative to corn starch: You may use arrowroot powder is a fine powder, very similar to cornstarch. It is also gluten-free so if you're sensitive to corn-based products use this powder. It crisps the tofu just like cornstarch, although it might stick to the pan so be aware of that.
  4. Set a large frying pan or cast-iron skillet over medium-high heat and add the oil. It should not smoke so allow it to just heat. Cast iron holds a higher temperature so turn the heat just a bit down if you are using a cast-iron skillet.
  5. Add the tofu in a single layer. If your skillet is smaller then make it in two batches. Do not overcrowd a skillet. The tofu should sizzle upon contact when you place it in the hot oil, if not wait for a few seconds until it heats up properly. That is why you should add one and see if the oil is hot enough.
  6. Fry tofu until it is golden. Wait until the tofu releases from the pan before browning the next side; the underside of the tofu should be golden-brown. Continue frying until all sides are browned and crispy.
  7. Place each batch on the kitchen paper towel or wire rack, whichever you prefer.
  8. Put the ingredients for the sauce, except for cornstarch and water mixture, in a saucepan and bring to a boil.
  9. Meanwhile, combine cornstarch and water and mix until smooth in texture. Slowly add to the lightly boiling sauce while continuously stirring.
  10. Cook for a couple of minutes or until sauce thickens.
  11. Add crispy tofu to the sauce and coat it well. Garnish with sesame seeds and chopped green onions. Serve immediately. I like drizzling a bit of sesame oil just before serving, but it is optional.

Notes

  • If you wish to use store-bought General Tso's Sauce, you are more than welcome.
  • Tofu must be extra firm or at least firm for this dish.
  • If you are vegetarian using vegetable broth for the sauce

Nowadays, I am depending on speedy, like really quick dinners.

Whenever a chance approaches, I incorporate easy shortcuts in my dinners such as frozen ravioli and spinach.

There is definitely nothing wrong with that. So, today I am sharing a recipe that is barely a recipe, but it is flavorful, delicious and extremely easy.

I am aware that some of you do have a problem with frozen produce.

Let me explain, unless you are picking vegetables and fruit out of your garden the next best thing is to get yourself frozen one.

They are frozen so quickly that you are not losing any nutritional values comparing to fresh that are travelling for days across the country.

I made ravioli from scratch before, and they are amazing, but I really do not have the time to make them all the time.

It is after all time consuming, so I believe that frozen, home-style ravioli is pretty delicious.

Particularly if you get a great quality because you can really see the difference.

On top of all it is fast, and it saves me lots of time to do other things.

In the end, you can get whatever you like, or find on sale. It is all good, though, right?!

Ingredients

  • 1 pk. frozen Ravioli 1 pound + salt, for water (any on hand, spinach and cheese works well)
  • 1 tbsp. olive oil
  • 1 tbsp, butter
  • 1/2 pack frozen spinach (any on hand even fresh baby spinach but use about 2 cups)
  • 1 teaspoon lemon zest
  • 1/2 tsp. Lemon juice
  • 1 tbsp. parmesan cheese
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon garlic powder
  • Salt to taste

Topping:

  • Goat cheese per serving size

Instructions

  1. Boil water, and add a salt – generous pinch of salt. Add Frozen Ravioli. When the ravioli are floating they’re done.
  2. On the other side, heat olive oil and butter in a medium-sized frying pan or a skillet, and add fresh spinach – if frozen, defrost and squeeze the water out as much as possible, if your spinach is with cream bowls, that's okay, just slightly defrost or steam it if your bag is steamable.
  3. Add spinach to the oil and butter, then saute for a couple of minutes on medium-high heat. Taste and add salt to please your taste, a pinch or two.
  4. Drain the ravioli, but reserve a couple of tablespoons of pasta water.
  5. Add ravioli to sauteed spinach for a couple of seconds on a medium-high, turning around to coat and splashing with pasta water just to make it creamy.
  6. Sprinkle lemon pepper, land lemon zest.
  7. Squeeze just a bit of lemon juice, if you want fresh citrus flavour, but it is not necessary.
  8. I like mixing grounded parmesan cheese, Italian herb blend and garlic powder together, then add to the dish.
  9. Just before serving, add a tablespoon or so, of crumbled goat cheese or you may use feta if you wish.

Notes

You may use any ravioli, even homemade. My ravioli used in this recipe is with spinach and cheese filling.
