Tex-Mex Grilled Tofu Quesadillas

Tex-Mex Grilled Tofu Quesadillas are easy to make and amazingly tasty. Now everyone could enjoy and celebrate meatless meals together because my quesadillas are delightfully delicious.

Ingredients

  • 6 soft tortillas
  • 1 pounds Firm Tofu
  • 1 cup Guacamole
  • 1/2 cup Pico de gallo
  • 2 cups Mexican blend cheese, shredded
  • 1 cup Refried beans
  • 1 tablespoon of oil

Tofu Seasoning:

  • 1/4 tbsp chili powder
  • 1 tsp Spanish paprika powder
  • 1 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp ground black pepper
  • 1 pinch ground cinnamon
  • 1 pinch ground cloves
  • 1 teaspoon sea salt, or to taste

Instructions

Seasoning:

  1. Mix all the ingredients for the season and set aside.

Tofu Prep:

  1. Open tofu package drain water out and
    take each block of tofu and wrap with thick layers of kitchen paper towels or a
    clean cotton towel. Press slightly and pat dry. Make sure that most of the
    moisture is gone.    
  2. Slice into 1/2-inch thick tofu slices,
    and again pat dry each slab with paper towels.
  3. Add to the large and flat plate, then
    sprinkle on both sides with prepared seasoning, gently press to coat. Cover and
    refrigerate for 15 minutes.

Grill Prep:

  1. Open your pellets bag. I used Classic which is great for almost anything you want in your grill. Flavorful
    and strong. Wood pellets are poured into a storage container also known as a
    hopper. The pellets are then fed into a cooking chamber by an auger that is
    powered by electricity.
  2. When ready to cook, smoke setting with
    the lid open.
  3. Wait for the fire to start about 5 min, depending
    on the grill type and model.
  4. Now, close the lid and increase the
    temperature to the desired temperature and preheat for about 10-15 minutes.
  5. I cooked tofu on 350F, so my grill
    temperature was set to 350 degrees.


Grilling:

  1. Place tofu in the preheated and ready to
    cook grill to get infused with a real wood smoky flavor.
  2. Grill for 5 minutes on each side.
  3. Take it off the grill and start
    assembling. Do not turn the grill off yet.

Assembling and making quesadillas:

  1. On one side of the tortilla evenly spread
    about 1 tablespoon or so of guacamole, spindle freshly chopped pico de gallo, a
    handful of cheese then place grilled tofu on the top. Depending on the side of
    your tortilla, I would say about 4 to 5 slices to cover it. Add just a sprinkle
    more cheese.
  2. On the other tortilla spread about a
    tablespoon or two of retired beans, then cover the other tortilla with tofu.
    Making a sandwich. Lightly press and brush with oil.
  3. Continue until tofu is gone. You could
    make approximately 3 quesadillas with my method.
  4. Place each quesadilla on the hot grill
    and grill for about 4 to 6 minutes on each side or until the cheese is melted
    and grill marks are formed.
  5. Slice each quesadilla across making
    trundles and serve immediately with salsa, pico de gallo, and other fixings.

Homemade Naan

If you have never made this flatbread before, then my friends, it is the time for you to make homemade naan. It’s easy, delicious, and perfect for wraps, with grilled food or you can simply make naan pizza.

You all know that I love bread as much as I love making it. We were not able to eat anything without it for so long, but this one is requested in my house almost daily.

Once you succeed making it there is no going back to store-bought, and I have a perfect recipe for it. I have been testing this one many times because I could not find regular instant yeast.

So with that in mind, I found yeast for pizza this time around which is fast-acting yeast and was actually perfect for quick naan. Anyways, I wanted to test it just because I assume at this time many people have a hard time finding regular yeast.

It took me 5 minutes to put it together, 30 minutes to rise, and about 20 minutes or so to flatten out and cook in my skillet.

I tested my first one with a generous drop of oil, which I smeared all over the skillet’s bottom and dropped my first naan. The pockets start to form and I was jumping for joy. Small things make me happy so this was really joyful moment for me – successfully made naan.

My dear family asked for another batch, then another, and soon after it became one of their favorite flatbread.

Homemade Naan

Homemade Naan

Prep Time: 7 minutes
Cook Time: 20 minutes
Additional Time: 1 hour
Total Time: 1 hour 27 minutes

If you have never made this flatbread before, then my friends, it is the time for you to make homemade naan. It’s easy, delicious, and perfect for wraps, with grilled food or you can simply make naan pizza.

Ingredients

  • 1 and 1/4 cup warm water (10 fl oz/295ml, you can add a splash more if needed)
  • 1 tablespoon sugar (15g)
  • 1 package active dry yeast *read notes (2 1/4 teaspoon)
  • 3 1/2 cups all-purpose flour + 1/2 cup extra for later (500g)
  • 2 teaspoons salt (11.70g)
  • 1/4 cup plain yogurt (65g)
  • 1 large egg, mixed
  • 1/8 cup oil, approximately (30 ml) + 1 tablespoon to grease a bowl

OPTIONAL Topping:

  • 1/4 cup unsalted butter, melted (57g)
  • 1 teaspoon garlic powder or 2 to 3 minced
  • 1 tablespoon dried parsley

Instructions

  1. Stir together warm water and sugar, then add yeast and mix.
  2. In the other large bowl or a bowl of your standup mixer combine salt and flour, then stir.
  3. Turn your mixer to the lower speed with hook attachment or use a wooden spoon to mix and add water with sugar and yeast a bit at the time, then add yogurt and finally drop in the mixed egg.
  4. Increase the speed until you form a dough, about two minutes.
  5. It will be a bit sticky but remove dough from the mixing bowl, and use your hands to shape it into a ball.
  6. Grease a bowl with approx one tablespoon of oil. Place dough it back in the greased bowl, cover, and allow it to rise for 45 to 60 minutes at room temperature. I like keeping mine either in the microwave or turned off oven. If you are using Pizza yeast, fast and easy then I allow the dough just to rest for 20 to 30 minutes before working with it.
  7. Once the dough is ready, transfer it to a floured work area. I just keep dusting with flour as I roll out each naan.
  8. Using a knife or a pastry scraper, cut the dough into 10 equal pieces.
  9. Roll each into a ball with your hands, then place on the floured surface and use a rolling pin to roll out the dough into whatever shape it takes you until the dough is about 1/8 to 1/4-inch thick. They need to be thinner so there is no need to measure. They are perfectly imperfect.
  10. Now, heat a large cast-iron skillet or any type of skillet/pan over medium-high heat.
  11. Brush with oil then drop naan to the skillet and cook for a minute or two, flipping a few times. When naan begins to bubble and the bottom turns lightly golden and darker flip. I would say about 30-40 seconds before flipping on the other side. Make sure to work with the heat. I keep mine at medium temperature but manipulate as I go, meaning I turn the temperature a bit down if naan needs to cook more.
  12. Then transfer the naan to a separate plate, and cover with a towel. Repeat with remaining dough until all of the naan pieces are cooked.
  13. This part is optional: I made them plain so kids could make "sweet" sandwiches however, with garlic butter they are even better. Heat the butter in a small pan over medium heat until melted. Add garlic powder or raw minced garlic and cook for a minute then add about 1 tablespoon of dried parsley. Then remove butter from heat. Brush on each of naan on both sides.
  14. Cover if you are not going to serve right away and heat before serving.
  15. After they are cooled enough pack them in some wax paper or parchment paper and in an airtight container. They are amazing even the next day if you have any leftovers.

Notes

I used regular instant yeast as well as Fleischmann’s fast and easy pizza yeast. I liked using Fleischmann’s yeast designed for pizza because it is really quick.
Like I said if you are going with instant yeast you can expect the dough to double in size in less than one hour but with Fleischmann’s pizza yeast less than 30 minutes.

I cannot say they are not. My family honestly licked two trays clean and asked for more.

These rolls are soft, sweet, fluffy and favourite among kids and adults. Trust me on that one!

Now that the kids are home from school you can totally make the dough at night, place in the fridge, the roll-out, spread with Nutella and bake in the morning.

It’s not even a hassle. On the other hand, you do not have to refrigerate. Just use instant active yeast and bake these rolls in an hour or so.

Your family going to defiantly thank you when these come out of the oven. Even while they were baking my kids came out of the rooms asking what I was making.

As you can see they are not hard to make at all. Also, they are delciosu so you have no excuse to make over the weekend or any other day of the week.

Also, I must say that my cinnamon rolls are pretty amazing too, so hop over and grab a very similar recipe to this one.

This dough is kind of “all-purpose” dough so you can make many amazing baked goodies just by using one type of dough.

Nutella Rolls

However, for now, I can tell you that you can turn this into savory rolls, maybe spread some butter and jam, or perhaps walnuts and sugar, which was my in-laws favorite.

East, addictive and so delicious breakfast Nutella rolls.

Ingredients

STARTER

  • 1 pack dried yeast (1/4 oz)
  • 1 teaspoon sugar
  • 1/2 cup milk, warm to the touch (118ml)

DOUGH

  • 4 cups all-purpose flour (500g/1 lb), plus a few tablespoons more for dusting working area
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 2 large eggs, well beaten
  • 3/4 cup water (177ml)
  • 2 tablespoons softened unsalted butter
  • 1 tablespoon oil, plus for greasing bowl for the dough

FILLING

  • 1/4 cup Nutella

CLASSIC VANILLA GLAZE

  • 1 cup confectioner's sugar
  • 1 tablespoon unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 tablespoons milk, substitute with heavy cream or half and half

Instructions

ACTIVATE YEAST

  1. It's not necessary if you have instant dry yeast, but I like to do it. So warm up milk for about 20 seconds in the microwave-safe bowl or a cup until warm to touch, then add sugar and dried yeast.
  2. Mix and allow the yeast to start to bubble.
  3. When you see yeast get bubbly and thicken on the top it is ready. It usually takes about 2-3 minutes, depending on the temperature. Never use hot milk or water.

PREP DOUGH

  1. Measure and combine flour, salt, and sugar. Mix it together.
  2. Place everything in the stand-up mixer bowl.
  3. Make a small well in the middle and add activated yeast.
  4. Using kneading attachment of your mixer start mixing slowly while adding 2 mixed or beaten eggs, room temperature/soften butter, and water mixed with oil.
  5. Adjust mixer to a higher speed and keep kneading for about 3-4 minutes or until the dough is becoming a ball and pulling away from sides of the mixer bowl.
  6. Do not overmix, there is no need. The dough will be softer on the touch.
  7. Transfer dough to well oiled larger bowl and cover. Place dough either in the oven or microwave so it could rise. If your oven has a proof setting this is a perfect time to use it, if not just keep it in the turned-off oven. Allow it to rise for the first time for about 45 to 60 minutes. You can make rolls after this point, but I do step 8. and 9. most of the time.
  8. It will double in size. Knead, cover and place in the fridge for about 6-8 hrs/overnight before making rolls.
  9. You do not have to chill the dough, however, they do come out so much better, plus it is easier to roll out. After chilling let it sit at the room temperature for about 15 minutes before rolling out.

FILLING

  1. Dust your working surface with a bit of flour. Roll out dough to (0.635cm) 1/4 inch thick. The size is approximately (38cm) 15 inches wide and (53cm) 21 inches long.
  2. Spread Nutella from one end to the other, but leave maybe 1/2 inch from the edge so it is easier to roll. You can add more or less. I will leave this to you.
  3. Slowly roll the dough until you reach the end. Pull ends to have an even end. Slice it in half, then cut the cylinder into 12 to 14 equal slices.
  4. Place cut side up and evenly spaced 9 x 13-inch baking dish.
  5. Cover pan with plastic wrap or a large cotton kitchen towel and set aside in a warm place to let rise for at least 30 minutes to one hour. They need to double in size.

BAKING

  1. Preheat oven to 350°F and bake them for 30 to 35 minutes. This also depends on your oven, and baking dish.
  2. If you are baking in the ceramic dish like I did, then bake at a lower temperature, I would do the same if you choose to bake it in cast iron, however, for a regular metal baking dish I would go to 375F and bake for about 25 minutes or until they are nicely golden brown.

GLAZE

Combine powdered sugar, melted butter, vanilla and milk in a large mixing bowl until smooth.
Pour over or drizzle warm rolls and spread.

Notes

Scraps aka leftover ends I place in the bigger ramekins and bake them as well. Nothing will be wasted!
