You can easily top yogurt with my homemade granola, perhaps eat it with your cereal, or pack it for your next hike. It gives you incredible energy and keeps you full as it is packed with such terrific ingredients.

We love packing it when we go on our family hikes. It is so much better than the store-bought version, and I must say it tastes even better.

Granola clusters are versatile. You can even make bars and carefully slice them but breaking them into smaller bite-size clusters is so much fun, and they look imperfectly perfect.

Homemade Granola with Oats, Almonds and Dried Fruit

Easy and tasty Homemade Granola with Oats, Almonds and Dried Fruit

Ingredients

  • 2 cups rolled old-fashioned oats (gluten-free)
  • ½ unsalted pumpkin seeds
  • ½ cup flax seeds
  • 1 cup roasted unsalted almonds.
  • ¼ cup PB2 Foods almond butter powder
  • ½ cup pure maple syrup
  • 1 tbsp coconut oil, melted
  • 1 tsp. vanilla extract
  • 1 cup dried fruit; ginger, cranberry, mango, goji berries.

Instructions

  1. Heat the oven (with the oven rack in the middle) to 350°F. Line a rimmed sheet pan
    with parchment or use a silicone mat.
  2. In a large bowl, combine the oats, almonds, and flax, and pumpkin seeds. You may use
    other seeds as well.
  3. Add almond powder and store to coat.
  4. Combine maple syrup and coconut oil, and vanilla extract. Whisk until creamy and
    smooth.
  5. Pour the mixture over the oat mixture. Use a spatula to stir until well combined and
    the oats are evenly coated.
  6. Pour the mixture into the prepared pan and spread it into an even layer.
  7. Bake for about 30-35 minutes, stirring halfway through or until crisp.
  8. Break into clusters and store in glass jars or containers for the best taste.

With that being said, I have this tasty No Bake Sweet Fruit Pizza for you guys. The video is straight to the point as all my other videos are. You can easily follow along and make it yourself as well.

 

Other than this topping, you could make caramelized apples or pears for the upcoming fall season or S’mores with Peanut Butter. Now, do not you agree that those versions sound incredible? My mouth is certainly watering. I love the flavors of fall.

However, since we are still blessed to have summer berries, I have created this colorful fruit pizza with a slightly sweet, chilled cream cheese with a hint of the flavor of peanut butter.

Sweet Dessert Recipe

No Bake Sweet Fruit Pizza

No-Bake Sweet Fruit Pizza recipes are slices of heaven. I say recipes because there are many options to create an incredible sweet pizza. They are delicious, beautiful, and effortless to make. I have a feeling that most of you are going to agree that this makes an excellent and unique dessert. Well, let us be real, this is a type of tart, but isn’t it so much fun calling it a pizza?!

Ingredients

Sweet Pizza Base:

  • 1 cup almond flour
  • 1/2 cup roasted unsalted peanuts, chopped
  • 2 tablespoons cacao powder
  • 3 tablespoons confectioners swerve, sweetener
  • 2 tablespoons PB2 Powder
  • 2 tablespoons monk fruit syrup
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons coconut oil
  • 1/8 teaspoon sea salt

Filling:

  • 4 oz cream cheese, softened
  • 3 oz heavy whipped cream
  • 2 tablespoons confectioners swerve, sweetener
  • 1 tablespoon PB2 Powder
  • 1/2 teaspoon vanilla extract

Topping:

  • Mixed Berries— blueberry, blackberry, raspberry, and strawberry.
  • 1/2 tablespoon confectioners swerve

Garnish:

  • Fresh Mint

Instructions

Line a cake pan,
skillet, or springform pan with parchment paper. If you wish for pizza look than
I recommend a circular pan.

Combine

  1. The almond flour, cacao powder, chopped peanuts, PB2 powder, salt, the monk
    fruit syrup, vanilla extract, and coconut oil stir the mixture in between each
    ingredient addition.
  2. Using your fingers mix until it comes together into a sticky dough.
  3. Press the dough evenly along the bottom of the prepared pan. You may brush the bottom of the
    pan or a skillet so the parchment paper could stick better without moving.
  4. Chill the base in the fridge for roughly 10 minutes.

Filling:

  1. Using an electric mixer, combine softened cream cheese, whipped cream, Swerve sweetener, PB2 powder, and vanilla extract.
  2. Mix until smooth and thick in texture.
  3. Pull the pizza base out of the fridge and spread evenly filling then put it back in the fridge for ten more minutes.

Topping:

  1. Wash and pat dry berries, or any other the fruit you have chosen to use.
  2. Distribute fruit evenly on the top of the sweet filling.
  3. Dust with a bit of Confectioner Swerve and garnish with fresh mint.
  4. Allow to rest and chill in the fridge for approximately 30 minutes before serving.

Notes

  • You may use any sweetener that you prefer.
  • If you are allergic or sensitive to peanuts, please use alternative products such
    as unsalted chopped almonds, and
    PB2 Almond Powder The outcome will be
    slightly different but nonetheless very tasty.

Apple Cinnamon Waffles with Apple Compote is so amazing and perfect for this cooler, autumn weather.

I just love my weekend to start on a happy note. Preferably with warm waffles or pancakes, and a hot cup of coffee.

I made these more than a couple of times last autumn as well as winter season. My family just love warm and cozy breakfasts, especially when we are all still in our PJs.

Anyhow, I really love pancakes, but waffles hit the spot every single time. Well, in particular with a flavor and aroma when I make these waffles with apple compote.

Do you like apple picking? I absolutely love getting apples from our local farms. To be honest, I am a huge supporter of our farmers, as we all should.

With that being said, getting a wooden case of delicious, locally grown apples is pure bliss. They are magical and so juicy.

The kids enjoy apple picking as well, so when we make something like these waffles with apples is just labor of love in my eyes.

Autumn to me means roasting sweet pumpkin or winter squash, chestnuts, and apple compote. When I was a little girl I could not wait for the fall season to arrive.

I didn’t have an opportunity to eat waffles like this when I was a child, but I sure loved my apple compote and crepes.

Apple Cinnamon Waffles with Apple Compote
Yield: Serves 4

Apple Cinnamon Waffles with Apple Compote

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Apple Cinnamon Waffles are so easy and tasty. They make a perfect weekend breakfast or a brunch.

Ingredients

  • 2 cups All-purpose Flour
  • 3 Tablespoons Sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon Baking Soda
  • 1/2 teaspoon salt
  • 2 teaspoons Cinnamon
  • 3 Eggs separated
  • 1 and 1/4 cups milk
  • 1/3 cup vegetable oil
  • 1 apple finely chopped or shredded
  • Butter for greasing the waffle iron

Apple Compote

  • 1 tablespoon unsalted butter
  • 4 Apples chopped, (Honeycrisp)
  • 3 Tablespoons Maple Syrup, or to taste
  • 2 teaspoons Cinnamon
  • 1 tablespoon lemon juice
  • Pinch of Salt

Instructions

  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. In a bowl sift together flour, baking powder, salt, and cinnamon. Set aside.
  3. In a second bowl use whisk (I use small from the electric mixer) to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow.
  4. Add oil, and milk to the eggs and whisk to combine very well. Combine the egg-milk mixture with the flour mixture and whisk just until well blended. Do not over mix.
  5. In the third bowl, beat the egg whites with an electric mixer until soft peaks form, few minutes or so.
  6. Gently fold egg whites into the waffle batter.
  7. Add a finely chopped or shredded apple in the mixture and fold it again.
  8. Lightly brush butter on the waffle iron and pour enough batter in iron to just cover waffle grid, about 1/2 cup, of course, this depends on the size of your waffle maker.
  9. Close and cook as per manufacturer's instructions -until golden brown.

Apple Syrup

  1. In the sauce or frying pan add butter and coat it well over the medium-high heat.
  2. Add chopped apples, and saute apples for about 3-4 minutes turning them so they could get a nice color on all sides.
  3. Add Maple Syrup, cinnamon and lemon juice, and just a pinch of salt.
  4. Cook for a couple of minutes or until the sauce is thick and all diced apples are coated well with the sauce.
  5. Drizzle over the waffles and scoop apples and use them as a topping. You can also add nuts. I used almonds, but you can add walnuts or hazelnuts, etc.

Notes

You may try other fruit or sweet potatoes, maybe sauteed bananas... be adventures!

You can use Gluten-Free Flour and sugar-free pancake syrup instead of maple.
