Homemade, easy and delicious Summer Treat

Who doesn’t like delicious ice cream in the middle of summer? Heck, we love ice-cream even in the winter time. There is something about crumbled cookies in the ice cream; it gives you just a bit of crunch, more sweetness, and one tasty bite. We just loved this ice-cream flavor as well. 

My husband, Nebs, loves ice creams. His personal favorite is Rocky Road, but after eating this one he said it is probably this one if I added a handful of nuts. It didn’t cross my mind but hey if you feel adventures please add your favorite nuts into ice cream mixture. I think pecans or walnuts would work very well with this favor.

Now, Ice-Cream sandwiches are something totally different. My kids’ love, love, love ice-cream sandwiches and what better way to create some memories this summer season than let them make these delicious sandwiches themselves. I think they did one amazing job. Well, my oldest one was working, but I still have these two munchkins that are still willing to do these kinds of things with me. I just enjoy every single moment.

Anna, my middle baby, is starting High School this August so I am trying not only to teach her a thing or two but to spend as much time as possible with her. They grow way to fast. Thank goodness that my 12-year-old still loves hugs and cuddles because before you know it teenage hormones will kick in and goodbye hugs until the end of high school haha. If you have teens than you probably already know this. As soon as 7th grade comes, suddenly they are wrapped up in some kind of drama. Trust me on that one!

I believe that parents should talk to their kids every single day, and at the same time allow them to express themselves with less judgment. We need to give them understanding and love rather than go into what other people going to say. Goodness! I know a thing or two about that one but I didn’t give a shit because if my daughter wanted blue or green hair I allowed her to color it. 

You know grown-ups are sometimes bigger bullies than kids are, or maybe those kids see it from their parents which I hate to say it. We can’t judge the kids by their parents or vice versa. I love my kids, and I want them to live54hb their life the best way they can. 

Anyhow, maybe I should consider having a monthly post just regarding kids; bits of advice, the things that I went through with my kids and perhaps some of you would like to join the conversation, sharing your story about it and help other parents.

Chocolate Chip Cookie Ice cream Recipe

Ingredients

  • 20 Chocolate Chip Cookies any brand or texture, split it in half (10ct)
  • 1/2 tablespoon Instant Coffee optional/decaf works well as well

BASE

  • cups  Heavy Whipped Cream
  • cup  Half and Half
  • 3/4  cup  liquid French Vanilla Coffee Creamer sugar-free
  • tbsp.  Vanilla Extract
  • 1/2  cup  Sugar

Equipment

  • Ice cream maker
  • 1 small bag ice cubes
  • Salt for Ice cream

ICE-CREAM SANDWICHES

  • 12 Chocolate Chip Sandwiches (6 sandwiches)
  • 1 scoop Chocolate Chip Cookie Ice-Cream

Instructions

  1. Combine all the ingredients together for the base, then add 10 crushed cookies and about 1/2 tablespoon instant coffee. You can add decaf if you wish.  

  2. Transfer the mixture to the Ice cream canister and follow instruction for your ice cream maker; add ice around the canister with ice cream salt in between ice cubes. Makes sure to freeze canister as well before transferring mixture into it.
  3. Allow it to churn for approximately 40 minutes.
  4. Meantime, freeze canister or freezer safe dish to transfer ice cream.
  5. Transfer ice cream into freezer-safe dish/container, roughly crush remaining 10 cookies and stir into half frozen ice-cream mixture.

  6. Let it freeze for at least 8 hours before serving, preferably 12 hours.
  7. Recipe for CHOCOLATE CHIP COOKIES  or use store-bought cookies 

  8. Add a scoop of ice cream in between of two cookies, make a sandwich and place on the freezer safe dish. Keep in the freezer until ready to be eaten. You can also pack them into individual wrappers. 

Recipe Notes

1/2 cup is a standard serving size for Ice-Cream (1 large scoop) There are 8 cups (4 pints or 16 scoops) in 2 quarts of ice cream.

Sinful? Yes! Delicious? Yes! Double trouble? Yes!
I love double trouble, I live in the moment, I don’t plan anything in life ’cause most of the time I get disappointed so I go with a flow {literally}. I enjoy simple things and truly appreciate them. I take my coffee pitch black. With that being said, I love my vanilla latte from time to time, as well as ice-cream coffee.

When I was much younger, I’d drink coffee probably 4 times more than I drink today. I thought it will be the other way around when I get the kids, but go figure!
I fell in love with Talenti Coffee, Chocolate Chip Gelato. It is like drinking coffee in a gelato/ice-cream form, so I thought let me make it so I can actually drink it.
On the other note, hubster absolutely hates it, but he is not a coffee consumer, never was and really tried for so many years to understand him. Haha… I tried to turn him around, you know, to convert him into a coffee lover, but only what he likes is the smell of coffee, and sipping on it, Hm, not so much! Seriously, we are like two different peas in a pod, but so far it has been working for us. Despite our major differences, we balance each other.

One thing that most people don’t know about me, is that I wanted to open my own little coffee shop; Cozy, a few tables and a bar with pastries and coffee/tea, but on the side, separated little “soundproof” room with huge window for kids, so parents could have sort of speak “me time”, and watch the kids while they are playing. Whole idea or vision was buzzing in my head before I woke up and realized that I’m not that type of person to run that kind of business; planning, dedication, a competition that would probably kill me, and I am pretty much a free spirited person. Even though I like competitions, a little challenge I don’t think that’d pull it off, so why even bother… We can all dream, right?! But, nonetheless, I’d always hope that maybe one day that dream going to come true. (When I finally grow up :P)

Coffee and Ice-cream are always welcome, although I wouldn’t drink it every day, mostly because I like my coffee dark and not to look like a dessert… but once in a while, we can give ourselves simple pleasures in life or better said simple, tasty and pleasurable indulgences, something that makes us say:”Ahhh….”

Ingredients

  • 2 scoops Talenti Coffee Chocolate Chip Gelato
  • 1 Double Espresso triple if you wish
  • 1/2-1 cup Ice-cubes
  • Sweetener  to taste

Instructions

  1. Place gelato in the glass/cup and let the espresso go over it.
  2. Add ice cubes and sweeter to your desired taste.
  3. You may add sprinkle of Dutch cocoa, but it's optional**

Recipe Notes

If you don't have an espresso machine, use regular coffee maker. I like it with French Roast Coffee If you do not have Talenti Gelato, any ice cream that you have or like will do. However, this kind gives you such a deep flavor and aroma, irresistible for coffee lovers.

It’s raining and it feels like Monday, seriously! It’s not cold, but just gloomy and dark, perhaps that’s how Halloween day should be, bit on the scary side.
That been said, the word was that Halloween will be rescheduled here for Friday or tomorrow due to the storm that is heading our way.
But there is no better way to comfort yourself on the day like this than with nice bowl of hot soup. I’ve been making a lot of soups lately, more than usually as well as vegetarian and lighter meals.
I made this butternut squash soup last weekend and it was delicious, but I did try to experiment with different recipes for few days. I was testing the difference in taste when I was roasting the veggies before blending vs. boiling the veggies. You don’t need to guess; roasting veggies gives such a great aroma, deeper taste and flavor and it’s not so bland. Also Spices play huge roll in case of changing the flavor, so add pinch or two of your favorite spice such as cumin or something to spice-it up more like red chili powder etc.

Butternut Squash Soup

Ingredients

  • 1 Butternut Squash ( medium size) cut in half lengthwise, and each half cut in half width-wise
  • 1/2 Onion cut in half and peel the skin
  • 3 Garlic cloves
  • Salt and pepper {Season before roasting}
  • 1 Tbs. Oil {to rub on vegetables}
  • 2 Cups  vegetable stock
  • 2 Tbs. Butter unsalted
  • 1 tsp. Cumin
  • Pinch of grated Nutmeg
  • 1/2 tsp. ground Ginger
  • 1/2 Cup Heavy Whipped Cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven on 400 degrees Fahrenheit
  2. Cut the squash(leave the skin on), peel and cut the onion in half and use 3 garlic cloves; season it with salt and pepper and rub oil all over. For the first 15 minutes let the squash bake on its own, then add onion and garlic. Place it the roasting dish and bake for about 25 minutes or until the squash is tender.
  3. Once done, take it out and carefully scrape the tender squash to separate it from the skin. Put it in the blender or food processor together with roasted onion, garlic and vegetable stock. Blend until all combined and smooth.
  4. Then melt the butter in the pan and pour the squash mixture in the butter, stir and add cumin, nutmeg, ginger, heavy whipped cream and salt and pepper to taste. Stir!
  5. Once at the boiling point turn off the heat and it's ready for serving.

Recipe Notes

Spices that I used are optional, you may add what you like or have. Heavy whipped cream do give nice creamy texture, but if you are vegan omit or if you are watching your waist line use half and half, it will still give you creaminess.
