These are probably the best homemade dinner rolls ever. Also, I will take bread over dessert anytime. That might sound crazy to some people, but that’s me.

You can either love as I am or hate me. Well, you have no reason to hate me, but you know what I mean.

I just really love bread with anything, and my family is like me. These rolls are incredibly delicious and easy to make.

It does take a bit patient, but that’s baking in general and it is totally worth it.

If you do not have the time to enjoy the process then you are not a baker. I might not be a cake maker, but I really enjoy making pies, rolls, biscuits, and bread.

Homemade Dinner Rolls

As you may notice I make everything with my hands. I do not use a large bowl, measuring cups/spoons, food scale, and a wooden spoon or multifunctional spatula.

Maybe one day when I am unable to knead the dough, I will invest in something like KitchenAid.

However, for now, I really enjoy working with my hands. If you wish to use Stand Mixer with kneading attachment please make your life easier and use it.

I make these days ahead for so we have them for sandwiches or school lunch. Most of the time I double the dough and refrigerate.

I grew up having weekend family feasts, so I love implementing that tradition with my own family as well.

It makes my heart full of joy having all my children around the table, delicious aroma of the cooked meal, usually roasted chicken and potatoes, with these rolls on the side in a basket cooling off.

Homemade Dinner Rolls
Yield: Serves 6

Homemade Dinner Rolls

Prep Time: 10 minutes
Cook Time: 25 minutes
Proofing Time: 1 hour 40 minutes
Total Time: 2 hours 15 minutes

Easy and tasty homemade dinner rolls.

Ingredients

  • 1 tbsp. dry yeast
  • 1 tbsp. Sugar
  • 1/4 cup Luke Warm Water
  • 4 cups all-purpose flour
  • 1 1/2 tsp. Salt
  • 1 tsp. Baking Powder
  • 1 cup Milk
  • 1 stick unsalted butter melted
  • 2 large eggs + 1 egg for brushing on the rolls

Instructions

  1. Combine flour, salt, and baking powder.
  2. Then take about 1/4 cup of warm milk and pour over sugar and dry yeast; Let it sit until the yeast gets activated {and this will tell you if the yeast is still active}
  3. Add room temperature eggs to melted and slightly cooled butter.
  4. Pour warm milk to activated yeast, then add mixed eggs and butter mixture and mix it.
  5. To wet mixture add dry ingredients (flour, salt and baking powder) and mix it until you cannot mix anymore with a wooden spoon or a spatula.
  6. Knead it until well combined, about 10 minutes of constant kneading. If you do not wish to knead it with your hands use KitchenAid with kneading/hook attachment and knead until the texture is smooth and elastic.
  7. Cover it and let it rise for 1 hour and 30 minutes.
  8. Brush each roll either with melted unsalted butter or mixed egg (I liked it with mixed eggs, and after baking lightly brushing with butter)
  9. Add everything bagel seasoning, about 1/4 teaspoon or more on each roll.
  10. Allow them to rise for at least one hour, preferably one hour and a half.
  11. Bake the rolls at 400F for about 22 to 25 minutes OR until the rolls are golden brown.
  12. Once done cover the pan with a cotton kitchen towel and let it cool down before serving.

Notes

You can: after you brush rolls with egg or butter you can sprinkle some sesame seeds or poppy seeds on top before letting them rise. Or you can keep them plain, or add whatever topping that you prefer. The size of the rolls before the second rise should be smaller than the size of the tennis ball, but they will rise more in the oven. You can make 8 large rolls or about 12 smaller ones.

If you have leftover dough: This dough is even better after a few days of refrigeration. Just make sure to cover very well, the best way is to place in a Large Storage Plastic Bag (for vegetables or meat) close, take the air out and place it in the fridge for up to 2 days.

When you want to use it, just let it rise on the room temp. for about 30 min. Line the baking pan with parchment paper. Roll the dough into a long log, then cut approximately equal slices of dough, as you can see of step by step pictures. Roll each slice into a dinner roll.

You may dust a bit of flour or you can use marble surface for easier rolling. Place each dinner roll on the baking pan. Make enough space in between so the rolls have the space to rise.

If your family is anything like mine, we have to have something sweet after dinner.

I am not a big cake baker. To be honest, I am not even close to being one, but every once in awhile I do make a tasty cake.

Well, I know it does not take a rocket scientist to make a cake, I get that. However, for me was like having two left hands.

It certainly is not the recipe because I would always pick the best-reviewed cake recipe to bake and mine would always come out more like a loaf of bread.

I could make anything with dough, but cake was this whole another dimension to me.

Anyhow, with a bit of practice and numerous hours watching youtube, I have created my first cake that not only looked like a cake, but it tasted delicious. I was so excited!

Just to mention that cake excitement happen only a couple of years ago so it’s not like I was 15 and made my first cake. Haha!

Well, then I have had another problem. Yes! I could not decorate the cake for shit. I still cannot.

Thankfully, we have these sheet cakes that do not require fancy-schmancy decorating.

I think it looks so much better like this. Looks more homemade, don’t you think?!

This pineapple cake with the addition of coconut is just incredible. I really liked it.

Every recipe that I found to test had a crazy amount of sugar, and some just didn’t make any sense, so I tested and retested until I created a recipe that is mine.

The whole sheet pan was gone over one lazy weekend afternoon when we celebrated my husband’s birthday.

I decided to make this cake simply because he loves pineapple and coconut.

However, he did say if I only had a tub of chocolate with me. Ah! You can’t please them all the time.

Pineapple and Coconut Sheet Cake is delicious, moist and so easy to make a quick dessert.

Ingredients

CAKE

  • 1 1/2 cups sugar
  • 2 eggs, room temperature
  • 1/2 cup vegetable oil
  • 2 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 20-ounce crushed pineapple with juice
  • 1/4 cup coconut shreds
  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

FROSTING

  • 1 (8-ounce) package cream cheese
  • 1/2 cup butter, softened
  • 2 cups confectioners' sugar
  • 2 teaspoon vanilla extract

TOPPING

  • 1/2 cup toasted coconut flakes

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Coat all over a 10 x 15-inch baking sheet with butter, or you could use 9 x 13-inch metal baking sheet pan and line either with a sheet of parchment paper.
  3. In a large bowl, with a hand mixer, beat sugar, eggs, oils, and vanilla until well combined and fluffy.
  4. Add pineapple with juice, coconut shreds, flour, baking soda, baking powder and salt; mix until well combined.
  5. Transfer the batter into well-greased baking dish and bake in the oven for 25-30 minutes until the top is golden brown and a toothpick can be inserted in the centre and removed without any batter sticking. Remove the cake once fully baked and let cool.
  6. To make the frosting, in a medium bowl, combine softened cream cheese, butter and confectioners' sugar and vanilla until smooth. Spread over cooled cake and sprinkle with coconut.

Notes

To toast the shredded coconut:

Add 1 cup of coconut flakes into a skillet and toast for about 2 to 3 minutes at medium heat. Be sure to watch it carefully, so it doesn't burn so keep stirring.

I used the baking pan for brownies (12.25 x 8.75 x 1.13) just because I wanted more hight to have when I take the pictures, but sheet pan is just perfect for this recipe.

I love a good sandwich, especially these amazingly delicious and super easy Bacon Eggs and Cheese Croissant Sandwiches.

It is a comforting breakfast or you may eat it for brunch. Well, we prep it many times even for dinner. Wouldn’t you agree that sometimes breakfast for dinner hits the spot?

Just the other day before my oldest son, Aleks, went to work I made these sandwiches for him.

Bacon Eggs and Cheese Croissant Sandwiches

So, if you into making your own croissant, be my guest and made that buttery pastry. However, you can pretty much get them these days in any grocery store bakery.

I got a boxful of smaller or mini Croissant from Kroger’s brand private selection. They were great for these sandwiches. Additionally, it saves you so much time.

Anyhow, I do have many sandwich recipes so my blog that I know you will love. I must recommend one of my favourites, which is similar to this one just by using bagel.

I know perfectly well that this sandwich is nothing new, but I wanted to have it on my blog as an idea.

You know when you come and search for sandwiches and you see these beauties. You instantly know that you are craving it.

Scramble some eggs, crisp up your bacon in the air fryer, add a few slices of cheese and you got yourself an amazing breakfast meal.

Bacon Eggs and Cheese Croissant Sandwiches
Yield: 1 Serving

Bacon Eggs and Cheese Croissant Sandwiches

Prep Time: 2 minutes
Cook Time: 10 minutes
Total Time: 12 minutes

Bacon Eggs and Cheese Croissant Sandwiches are a perfect breakfast or brunch meal.

Ingredients

  • 2 slices of hardwood bacon
  • 2 large eggs
  • 1 teaspoon butter
  • Pinch of salt and ground black pepper
  • 1 tablespoon chives, optional
  • 2 oz mild cheddar cheese, or any on hand
  • 2 small croissants or one larger.

Instructions

  1. Place bacon in the air fryer and crip it up for 10 to 12 minutes, depending on your taste, at 360 degrees Fahrenheit. You may also use bacon pre-set temperature on your air fryer. For oven baking: place bacon in the baking pan and bake for about 15 minutes at 350F or until it is crispy to your desire. *If you are baking in the oven, do not toss those drippings. Save them and you may make potatoes or chicken in it. So good!
  2. Meanwhile, make eggs. Crack two eggs in the cup and add salt, pepper and chives which are optional. Mix until the eggs are smooth. Preheat your skillet or frying pan with a dab of butter and at the lower temperature cook eggs. You could make something like an omelette and fold with cheese before adding to your sandwich or you may make scrambled eggs and toss some cheese on top to melt. You have both useful methods below.
  3. Now, open your Croissant just by slicing in half.
  4. Add cheese eggs then slices of bacon on top.
  5. You may heat it all together in the air fryer, microwave or oven for a couple of minutes or until Croissants are softer. Enjoy!

If you are heating sandwich in the air-fryer, use temp of 350F for 3-4 minutes. The time and results will depend on your air fryer.

If you are heating sandwich in the microwave, you will heat it for 20-30 seconds. The time and results will depend on your microwave.

If you are heating sandwich in the oven, you could preheat the oven to 375F, cover sandwiches with alum foil or similar and allow it to get sandwiches heated through for about 5-7 minutes. The time and results will depend on your oven.

Creamy scrambled eggs:

  1. The moment the eggs hit the pan, use a heavy-duty silicone spatula to rapidly swirl in small circles around the pan until the eggs look slightly thickened and very small curds begin to form.
  2. Then try changing from swirling in circles to making long sweeps across the pan so it could cook into larger curds. You may add a bit of shredded cheese on top and before adding in the sandwich.


Cheesy Omelette:

  1. Once the pan is hot, pour in the combined mixture in the pan. Use a heavy-duty silicone spatula to gently move cooked egg in from the edge of the pan to the middle, creating curds.
  2. Slightly tilt a skillet or a pan and rotate to make sure that any uncooked egg fills in any empty spaces that you just pulled in the middle.
  3. When the surface of the egg looks wet but does not jiggle or look too uncooked when the pan is shaken, it is ready for the cheese or any other filling.
  4. Add cheese on one side and fold the omelette in half with a spatula.
  5. Slice in half and you can use one half of the sliced omelette for each sandwich.

Notes

Double or triple the ingredients if you going to make more than one serving. Salt and black pepper technically you will only need a generous pinch of both.
