Beef Burrito Skillet is such a tasty ad easy dish that you will be making it over and over again. I mean who doesn’t like an easy weeknight recipe? We love simple weeknight dinners.

Not only can you prep this quickly but it is versatile too. My family loves meals like this Easy Beef & Bean Burrito Skillet at least once a week. We absolutely love it!

Now, when I say it’s versatile, I mean it. You can use ground chicken or even cubed chicken in this. I know t won’t be a beef skillet, but some people like chicken, which is perfectly fine.

With grocery prices going up daily, I feel like we need meals like this to feed a big or a small family. Leftovers are away welcome for work or school lunch.

I am going to give you basically a basic recipe but let’s talk options and possible additions, shall we?

Veggies:

Black Beans

Sweet Corn

Roasted or pan-fried peppers

Cauliflower “rice” mixed with regular rice.

Topping:

Sour cream, or Crema Mexicana

Pickled Jalapenos

Shredded cheese

Queso or Salsa

My kids are different from each other so they will add whatever they actually like so for a fun dinner and certainly less stressful you can line all of the options so they can pick what they want.

Beef Burrito Skillet is a wonderful weeknight dinner idea.

Ingredients

Beef Burrito

  • 1 Tbsp Olive Oil
  • 1 lb 80/20 Lean Ground Beef
  • 1 pack (1 oz) taco seasoning
  • 1/4 tsp. Sea salt
  • 1/4 tsp. Ground black pepper
  • 1/4 cup beef broth
  • 1 cup mild salsa
  • 1 cup Mexican cheese blend, shredded

Topping:

  • 2 tomatoes, diced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño Pepper, sliced
  • 1 avocado, sliced
  • 4 to 8 tortillas, depending on the size

Garnish:

  • 1/2 cup fresh cilantro (sub with parsley)
  • 1 medium lime

Instructions

  1. In a skillet over medium-high heat, cook 80/20 Lean Ground Beef (1 lb) with a drizzle of Olive Oil (1 Tbsp) breaking up the meat with a wooden spoon. Cook until the beef is no longer pink.
  2. Add the Taco Seasoning, Salt, and Ground Black Pepper (1/4 tsp) to taste and stir until well combined. Taste to see if you need to add more seasoning.
  3. To the cooked ground beef, add Black Beans, White Rice, and Beef Broth, then stir well.
  4. Reduce the heat to medium-low and cook for 5 minutes uncovered. Stir in Mild Salsa of your choice, chunky or smooth.
  5. Add Shredded Mexican Cheese Blend (1 cup) and combine it with everything. Remove from the heat.
  6. Before serving garnish with Fresh Cilantro and Lime Wedge).
  7. Serve with Jalapeño Pepper, Fresh Cilantro, extra shredded cheese, Tomatoes, Avocado, and Sour Cream.
  8. Warm up Tortillas to your taste and enjoy!

Notes

If you do not like cilantro, parsley could be used instead.

YOU CAN ALSO USE CHICKEN FOR THIS DISH. COOKING TIME DEPENDS ON THE PART OF CHICKEN AND THE SIZE.
