Breakfast Eggs & Beef Wrap

It’s finally Friday and my favorite day of the week…so Happy Friday everybody! I have been planning to post this for a few days now, and today is the day. It was my post workout breakfast/brunch and it was so delicious that I have to share it here.

When the aroma of home-cooked meal start circling around the house and gets through the outside door, even your neighbors will invite themselves for a nice warm breakfast and a cup of Joe.

I told myself I will not get breakfast burrito in fast food chains no matter what-even though it looks so appealing and looking at their commercial images it just pulling you to go and get one. Do you feel the same? I know, I know… I feel the same! But…I said no to breakfast burrito simply because it’s so easy that even my kids can make it. It takes like 10 minutes to be finished, so why spend money or eat something that’s been only preheated and not really healthy, when you can make this in comfort of your home. Trust me, it always tastes better at home.


It is a perfect balance in taste, color, and deliciousness. You all know that I love spicy, so I do add a little flare to lift up the flavor and wake up my morning taste buds, but it’s always optional if you cannot handle or like spicy. However, I think even those that don’t like it would be able to handle just a little heat that I used here in this breakfast wrap. 

Breakfast Eggs & Beef Wrap

  • 1 Tortilla of your choice white, whole grain, spinach est.
  • 6-7 Fresh Spinach leaves

Scrambled Eggs

  • 2 Eggs
  • 2-3 Tbs. Skim Milk
  • Pinch of Salt and Pepper
  • 2 Scallions chopped
  • 1 Tbs. Feta Cheese
  • ½ Tsp. Oil canola or olive oil, but you can also use unsalted butter

Ground Beef

  • Drop of oil
  • ½ Cup Lean Angus Ground Beef
  • ¼ Cup Onions
  • chopped
  • Pinch of Salt
  • and Pepper
  • ½ tsp. Sriracha

Topping options

  • 2 Tbs.
  • Mozzarella Cheese
  • Red hot chili
  • pepper
  • Extra scallions


  1. In a bowl mix
  2. eggs, season them with just a small pinch of salt and pepper; Add
  3. chopped scallions and Feta Cheese and lightly mix again. Preheat the
  4. pan and add oil, Pour egg mixture and mix until the eggs are done and
  5. scrambled.
  6. In the other pan
  7. (or the same just wiped) Put just a drop of oil and add meat, and
  8. onions then season it with a pinch of salt and pepper  Stir well, try
  9. to press a meat so it can break into smaller chunks. Add Sriracha and
  10. mix again until meat is completely done. Put it on the plate with the kitchen paper towel to get rid of unnecessary fat which will be
  11. less because of the Angus beef-but if you use regular ground beef it
  12. will have more fat.


  1. You can warm up
  2. tortilla but it is optional. Add scrambled eggs, ground beef on
  3. top-sprinkle with mozzarella cheese and top with chili peppers and
  4. scallions *optional
  5. Add Spinach and
  6. wrap it up.
