Cheesy Baked Pasta with Chicken

From leftovers you can make great dinner!
I don’t like to dump food in trash, and most of the time I just keep it for few days in the fridge until I figure out what I can use it for. I tent to make always too much pasta, and this kind of dinners often find place on my dinning room table. During the week I made twice pasta, and as you can see those are two different types of pasta (shell and rigatoni), and of course had rotisserie chicken that we didn’t finish but still had plenty meat on the bones. This lunch or dinner was done in less than 20 minutes, and my family loved it. 
So if you ask me is there a recipe, well no, not really, but even if you don’t have leftovers you can still make this really fast. 
I am lucky that all my kids love peas, cheese, chicken and pasta–put everything together, bake and there you go, dinner on the table that no kid would refuse eating. You can switch and/or add any veggie of your choice. 
What I love about this is that it’s nice and creamy, prefect combination of flavor, and yes I did use Ragu Double Cheddar Cheese from Jar. I know what you gonna say, but my son loves Ragu cheese as much as he loves ketchup and if that will make him eat more veggies I am all for it. Those are two products “must have” in my fridge. 
So here what I’ve made from my leftovers. 



Cheesy Baked Pasta with Chicken
Serves 5
Ingredients:

  • 3-4 Cups Pasta, cooked
  • 1 Cup Rotisserie chicken
  • 1 Cup frozen Peas
  • 1 Red Pepper
  • 1 1/2 Cup Ragu Double Cheddar Cheese
  • 2 Tbs. Parmirgiano cheese
  • 1 Tbs. Butter + for buttering the baking pan
  • 1/2 Cup Plain Breadcrumbs

Directions:

  1. Preheat the oven on 400F 
  2. Butter the baking pan; in separate bowl combine pasta, chicken(you can cube it or rip apart), peas and add sliced pepper on top. 
  3. Pour Ragu Cheese over the the pasta mixture, stir; Add Parmigiano Cheese all over the pasta.
  4. In another bowl using fork press cold butter into breadcrumbs until you see small balls of butter covered in breadcrumbs; Sprinkle it equally on top.
  5. Bake for 15-20 minutes in preheated oven. Once its done cover before serving. 

Serve Hot!

Note*
You can use any types of pasta for this dish as long as it’s cooked. 
Chicken can be grilled, sauteed or baked before combining it with pasta. 
You may use any vegetables that you desire. Peas are are great addition for this dish.
