These cookies were not planned for today...it was something completely different on my mind! It was suppose to be a cake that ended up looking like a flat tire...but I am not giving up until that flat tire pumps up! I can't tell you what kind of cake it is, but it's completely something new, unique however with an old name. Am I teasing you now? :)

But don't fear I ended up with my back up plan. I use to have two or three recipe always ready, but I picked up these last minutes habits from somebody...will not say who, but she is very dear virtual blog friend of mine!:P
To be honest I work much better when I am under pressure, and I am so glad that these cookies finally made it on the stage.

Anyhow..these cookies came out amazing. If you are chocolate-banana lover then these cookies are for you!!! They are rich, flavorful, delicious and perfect for any day of the week, and any time:)
So let get started....

- 1/2 cup unsalted butter, room temperature
- 1/4 cup light brown sugar
- 1/4 cup white granulated sugar
- 1 large egg
- 1 tsp. pure vanilla extract
- 1 cup all purpose flour
- 1/4 cup Dutch-processed cocoa powder
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 1 1/2 cups dark chocolate chips, melted
- 2 Ripe Bananas, mashed
- In a large bowl, add the butter and sugar and cream together with a hand mixer.
- Add the eggs and vanilla extract to the mixture and mix until combined.
- Mash Bananas really good to be like a creamy texture, and add to the mixture by folding it in.
- Melt the dark chocolate chips, let it cool down for minute or two and gently fold it in as well.
- In another bowl, mix the cocoa powder, flour, baking soda, and salt;
- Slowly add the dry ingredients into the creamy mixture and continue mixing until all combined.
- Roll the dough into 2 logs that are about 2-inches high. Wrap them in waxed paper or a plastic wrap and place in the refrigerator for 1 hour.
- Preheat oven to 370 degrees F.
- Once thoroughly chilled, slice the cookies into 1/2-inch thick rounds.
- Place on a parchment paper lined cookie sheet and bake for 10 minutes.
- Remove from the oven to a wire rack to cool.
Note: I partly adapted this recipe from joy of baking. I liked two recipes and ended up combining both, but added more ingredients that aren't in the original recipes. You can see cookies #1 here and cookies #2 here
