Sweet Pan Roasted Peppers with Garlic Infused Sauce

  I had this pepper dish for a while on my mind. It is also something that I grow up eating, however my husband actually refused to taste it few years ago, and I never made it after that. He listened to my idea today and said in a little sarcastic tone of voice: "Really! Are you actually going to post peppers on your blog?" 
Without even thinking I went to the kitchen to prepare my peppers, but I felt disappointed and little upset that he didn't like my idea. Cooking makes me calm. It's very therapeutic and I can concentrate on the recipe that I have in my mind and at the same time I tried to erase what he said earlier. 
When the sweet red peppers and a few sprinkles of spicy crushed peppers hit the pan, you can smell the spiciness wrapping my whole kitchen. Once I dropped the butter and garlic, I think my neighborhood was infused by pepper-garlic flavor
I set up everything for the photo-shoot, but with corner of my eye I could see my hubby slowly walking toward the kitchen without noticing that I can see him stretching on his toes trying to figure out what smells so good. I finally finished and he said no, no I will not eat that...I dipped the bread in the rich garlicky sauce and pushed it in his mouth. All you can see is confusion in those big brown eyes. He was not expecting the taste to be explosion of the flavor playing with his taste buds. 
I took my plate and he took the whole pan...I ended up making one more round of these roasted peppers with creamy sauce, however second time he was in the kitchen watching me making this simple dish for two. 
This is summer recipe, light, flavorful, very tasty and it goes beautifully if you pair it with something from the grill. I actually like them more spicy made with for example hot banana peppers or addition of one chili pepper mixed with sweet once...
Homemade dinner recipe for Sweet Pan Roasted Peppers with Garlic Infused Sauce

Serves 2-3
Ingredients:
  • 6-7 Sweet Peppers, small
  • 1 Tbs. Olive oil
  • 1/4 tsp. Crushed Red Pepper
  • 2-3 scallions, chopped
  • 2-3 Garlic cloves, thinly sliced
  • 1/2 cup Sour Cream {Breakstone's Sour Cream}
  • 1/3 cup Half and Half/or heavy whipped cream
  • 1 tsp. Unsalted Butter
  • 1/4 tsp.(1 ml.) of Sea salt/or to taste
  • 2-3 Drops of sesame spicy oil *optional

Delicious and Sweet Pan Roasted Peppers with Garlic Infused Sauce

Directions:

  1. Heat the pan with oil on medium high and add peppers. They will start smoking fast in the hot pan.
  2. Once they are getting nice and brown on each side, turn down the heat on low and put in sliced garlic, chopped scallions, and red hot pepper flakes; stir and try to turn the peppers few times.
  3. Cook for next minute or two on low so the garlic and scallions can get their flavors out. 
  4. Prepare the large pan fitted lid and measure about 1 cup of water. 
  5. Turn the heat on medium again, pour the water and add salt in; immediately close with a lid tightly. 
  6. Let the peppers get steamed up and they will get softer.
  7. Once you reach the softness of the peppers and water evaporate more than half it is time to add sour cream and half&half (or heavy whipped cream)
  8. Stir well until the sour cream Sauce get thicker, then add one teaspoon of unsalted butter; cook for about 2-3 minutes.
  9. Serve it hot and you can add few drops of spicy sesame seed oil.
Note*
  • I liked the lift in a flavor that sesame seed oil gave me. It was really one point up added in a taste. it is optional and I would say it could be substituted with more crushed red hot pepper flakes to give you more heat in the sauce. 
  • You can use any peppers, sweet or spice and of course any color that you desire. However if you use regular sized peppers than you will need bigger/deeper pan, more water and more time until they can get softer. 
  • You do NOT have to use any Crushed red pepper or anything spicy if you cannot handle or don't like spicy food. It is optional and you are in control how much is too much. 

As you can see my plate and his pan was clean...We loved it and I am really happy now that I am able to share this extremely easy recipe today with all of you. 
I am taking this weekend off away from blogging {if that will happened} and I am going on a little much needed break, however I will try to post my next recipe on Tuesday as usual with of course great dinner idea and next Friday I am planning to make yummy dessert to satisfy your sweet tooth!

    @Tiffany, Well these are not as spicy, but I like it so I added for myself more. It could be optional, you are in control how much you can handle so you don't have to necessarily use crushed red pepper.

  13. Every Summer my Mother makes roasted peppers like this on the BBQ. I just love this recipe, cause now we can enjoy some of those great flavours all year around. Beautiful pictures, and amazing recipe, thanks for sharing.
