With the temperatures rising up to 109 degrees Fahrenheit it is getting unbearable cooking. Even with A/C that is working overtime these days you can feel the heat just by looking through the window. I don't remember these high heatwaves in my lifetime. Maybe I should move up north! There is an idea, eh!:)
With that being said my meal prep is even quicker now.
Stir fries are way to go, in my opinion. They are filling, you can make them fast and on top of it there are so many stir-fry combinations.
This time I tried something new, something that I haven't done before.
I cooked my rice in the organic green tea and it tasted great! Actually to be honest, I couldn't feel the green tea taste at all, but it gave me just a little hint of something different.
Soy sauce and garlic flavor do dominate, but still rice tasted fantastic on it's own too.
So dinner that you see today was actually for me and my husband date night. We stayed indoor, had a dinner, shipped our beautiful 3 kids to grandma' and of course we watched a movie in a peace. I love going to the cinema, but I feel more comfortable on my comfy sofa, who is with me?
We went on our first date in the cinema, so I have slight connection. It is sweet remembering those days, you know holding hands for the first time, feeding each other popcorn, staring at his face in the dark, thoughts that could be seen on my face "where have you been all my life?" ...you know, all the usual first date memories. We watched a comedy and poor man had to listen to my snort laughing for the whole 70 + minutes, I wonder why he decided to go on a second date at all. The best part is when you get to marry that person and than he decides telling you after few years what he thought about the first date. He was sweet don't get the wrong idea, but then maybe too honest if you know what I mean?!
These days I think that I am just a little bit tired going out to watch a movie, so yes I rather stay home. However looking at a bright side nobody have to listen to me snort laughing except my dear husband who will have to for the rest of his life! You are probably feeling sorry for him by now, don't you?!:) But don't feel sorry, I just make him home-cooked meal and he is happy camper.:)
Anyhow to cut the story short let me present you my date dinner idea!
Spicy Chicken with Fried Rice
Serves 2-3
Ingredients:
- 2 cups of rice
- 1 tea bag Organic Green Tea
Vegetables:
- 3 Garlic Cloves
- 3 small Red Sweet pepper -or 1 Large, sliced
- 1 cup Corn, fresh or frozen
- 1 1/2 Cup Peas, frozen or fresh
- 4 Mushrooms, any kind will work
Poultry or Meat:
- 1/2 Chicken Breast {or any kind of meat that you desire}
Garnish:
- Sesame Seeds
- Few drops of Lemon Juice *optional
Condiments:
- 1 TBS. Vegetable Oil
- 1/2 tsp. Sesame seed oil {spicy)
- Sea Salt and ground Black Pepper to taste
- Sprinkle of Crushed Red Pepper
- 1 Tbs. Soy sauce

Directions:
- In a pot put 2 cups of rice; with 2 cups you will need probably around 6 cups of water + 1 teaspoon of sea salt.
- Let the water boil with the rice until tender and almost done, then 3 minutes before draining it put green tea {filter bag} in there and let it boil until the rice is completely cooked;drain and set aside.
- Heat the Wok {or any frying pans} with a vegetable oil and add garlic; stir fry for few seconds.
- Add chicken because chicken takes the longer to cook; season it with bit of salt, pepper, and crushed red pepper;
- Once the chicken is getting nice color drop the veggies one kind at the time making the mushrooms the last one because they don't need much to get done.
- On a high heat veggies will start to cook pretty fast so you have to keep them moving; let them stir fry for few minutes on high heat until they are done.
- Drop the rice in the wok with the rest of the veggies, stir fry until it is coded with the oil; Stir so it doesn't burn!
- At this point I like to add Soy sauce and sesame seed oil; Stir fry for a minute and set aside until ready to be served.
- You can squeeze bit of lemon juice, it does give you fantastic flavor!
- Sprinkle with toasted sesame seeds, and this time I didn't use black sesame seeds, but you CAN if you like that option better.

Notes*
- You can also add few eggs, scramble them with the rice, chicken and veggies; I tried it and loved it!
- You don't know where to buy spicy sesame seed oil? Most of the local grocery stores do have them, just look in the Asian side of International aisle OR go in Asian/International store.
I hope you've enjoyed this dinner idea. It can be made for parties or movie nights with your friends, or perhaps just for two love birds!

Awww, sweet memories of first dates and falling in love! Lol - your hubby is stuck with your "snort" laughing :) I've never cooked rice in green tea but make fried rice often (just last night as a matter of fact) and everyone loves it. Happy 4th, Sandra - I hope the heat wave breaks soon!
