Lettuce Wrapped Marinated Shrimps with Bacon

Simple light snack or lunch for Lettuce Wrapped Marinated Shrimps with Bacon
Last week I felt like I need to make or better said cook something new. Looked in my fridge
and was happy to find the products that I really love eating.
Sure! I could’ve made
some pasta, sauce with rice, or plain sandwich…but I had something
else on my mind.
I put my headphones on,
cranked the music up and started to connect dots; in this case it was
connecting the recipe one step at the time. It feels great to get
something that was just a picture in my head few hours ago and now it
is sitting on the plate…but then once I took the big bite it didn’t
take me for a ride to my childhood, it was better than that, it was
that feeling, and taste of satisfaction. Being recipe developer is
hard, because it might be somebody in this world that tried this
before, but it was certainly something new to me from the taste to the
presentation. I took little of this and bit of that and made
something that is balanced and absolutely delicious
for whole family to enjoy or just my hubster and I, when kids are at grandma’. These packages are inspired by Korean lettuce wraps, I just used ingredients that I had on hand. 
See those are the
moments that I need to myself…to taste the food with my eyes closed
and truly feel how does it affect my taste buds, and how does it
feel once you swallow each bite. This…this tasted fantastic!!!!
Once you dip in a sweet
and sour sauce that I added few more ingredients it was truly taste
experience that I will never forget.
Also if you are not
eating bacon either because of the religious reasons or diet try
turkey bacon or chicken strips. I think it would be tasty either way.

Delicious Lettuce Wrapped Marinated Shrimps with Bacon

Lettuce Wrapped Marinated Shrimps with Bacon
Makes 4+ Wraps
Ingredients:

  • 4 or more large Lettuce Leaves, split in a half-take the middle root out.
  • 1 Green Bell Pepper, julienned 
  • 1 Red Bell Pepper, julienned
  • 1 Large Carrot, julienned 
  • Artisan Lettuce {Used Purple and Green}
  • 1/2-1 lb. Shrimp
  • 8 slices of Bacon, 1-2 for each wrap

Marinade:

  • 1 Tbs. Gochujang (Red Hot Chili Pepper paste)
  • 3 Tbs. Soy Sauce
  • 1/2 Tbs. sugar
  • 2 Tbs. Lemon or Lime Juice
  • 3 cloves of Garlic
  • 1/2 inch grated Ginger
  • 2 Green onions, chopped
  • 1 tsp. Sesame seeds oil

Dip:

  • Ssamjang( Korean seasoned soybean paste) OR you might like better Sweet & Sour Sauce {you can find it in any local grocery store}
  • 1 Tbs. Toasted Sesame Seeds
  • 1-2 Green onions, chopped

Directions:

  1. First wash the shrimp and peel.
  2. Mix by hand whisk or food processor Marinade. 
  3. Add shrimps to the marinade, cover with a lid, or the plastic wrap and in in the fridge. 
  4. Allow shrimps to marinate for 1-2 hrs. 
  5. Take the shrimps out of the marinate and you can bake them or grill them along with bacon strips; 2 slices of bacon per wrap.
  6. Once the shrimps are done cooking, chop them in a small pieces.
  7. Now Wash the lettuce if needed and place on a chopping board; cut the Lettuce Leaves lengthwise taking the root completely out. 
  8. Cut the vegetables into thin slices, julienne strips; 
  9. Place 1-2 strips of bacon, one overlapping the other just a bit, put chopped shrimps, than slices vegetables one kind at the time, and artisan lettuce too; slowly start rolling bacon into the roll. 
  10. Once you have a bacon roll, place it on the lettuce and roll again. Since I split the Lettuce leaves into two, I wrapped it once more for easier hold. 
  11. Serve it with Sour and sweet Sauce if you desire, or Ssamjang with addition of toasted sesame seeds and chopped green onions. Perhaps Kimchi or/and Rice on the side.

*Notes:

  • If the wraps are falling apart you can use toothpick pick for better hold if you are taking them or picnics or work. 
  • if you are not eating “pork” bacon because of the religious reasons or diet you can certainly use turkey bacon or even grilled chicken strips- or omit altogether  
  • If you are preparing more more than 4 people, double the ingredients
  • You can cook everything and put in the individual plates and let everybody make their own personalized wraps-big or bite sized. 
  • Marinade works well with beef, chicken or pork.

I know that this does not look like a proper dinner, but sometimes I feel more simple meal pull family together. Whatever you are serving on the table your family and friends will appreciate it. I think that you really don’t need any other side dishes for this particular wraps..you just take them out and they will be gone in a seconds. These wraps will satisfy you!!!!!
