Coconut & Chocolate Chip Cookies

I wouldn't necessarily call chocolate chip cookies summer food, but it's a cookie and everybody need sweetness in their life, so I've decided to share with you my latest baking adventure. One of my favorite chocolate bars are Almond joy, and I am talking about oppression that is going on for over 10 years.
Even though these cookies don't have almonds they are sweet, delicious, chewy, and at the same time crunchy. In many ways the flavor remind me of a almond joy, I am guessing because of the coconut and chocolate influence. 
See, I don't have a sweet tooth but once I day I need to have something sweet either with my coffee or tea, so these beauties are perfect satisfaction for any ages. 




While my cookies were baking, I took a little break and started to look through my balcony door. i enjoyed looking at beautiful scenery of green trees and blue sky. In that very moment I turned my head and saw these beautiful deer family. Well, I am assuming that they are one happy family just looking for food, water and shelter in the woods that is close by. I couldn't resist, so I took my camera and shoot as many as 30 photos. They would come from time to time close to my balcony, but not very often you can see them in a group and in the day light, so I took that moment and enjoyed photo-shooting these gorgeous wild animals.






Coconut & Chocolate Chip Cookies
Makes about 25 Large cookies 
Ingredients:
slightly adapted from Epicurious
  • 1 1/4 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 Tbs. Cocoa powder
  • 1 tsp. salt
  • 1 stick unsalted butter, softened
  • 1 cup light brown sugar
  • 2 Eggs
  • 2 tsp. vanilla
  • 2 cups sweetened flaked coconut or more
  • 2 cups Chocolate chips, dark or semisweet
Directions:
  1. Preheat oven to 375°F.
  2. In a bowl mix together all purpose flour, baking soda, cocoa powder and salt. 
  3. In separate bowl whisk or use electric mixer cream butter and sugars until they reach a point of fluffiness. 
  4. Add eggs, and mix them really good, than add in flour, baking soda, cocoa powder and salt mixture. 
  5. Add in vanilla and mix in coconut flakes and chocolate chips.
  6. Drop dough with a Tablespoonful few inches apart onto already greased baking sheets and bake cookies until they reach golden brown color. *I sprinkled several cookies before baking with coconut flakes and some after, but that is optional- I liked more toasted as they bring the flavor even more.
  7. Pull them out of the oven and cool on a baking sheet for few minutes, than transfer to racks to cool completely.

  6. I have a sweet tooth, and these cookies look mouthwatering to me!! I also reduce the amount of sugar in cookies, for me they do not taste as good when they are too sweet.

    I am so impressed that you seem to live in such an idyllic place where deer families come and say hello :) I wish I would get the chance to leave town and move to a suburb or village, where I would have my own garden... I am daydreaming again *sigh*...

  11. Sandra, your cookies are beautiful--love the combo of flavors. I didn't have my first taste of Almond Joy until just a few years ago but I do really like them now. I bet these cookies are great!

  25. I only made dozen to two dozens of cookies in my life, but never put my favorite coconut in chocolate chip cookies before! How did I miss that as an ingredient!   36. have you ever tried Bounty bars? it's the European version of Almond joy but without the almond. It's my favorite candy and I'm so weak when I see it at the store.

  38. Oh, Sandra!! The cookies are fabulous, but those deer are beautiful!! We don't have deer here in coastal San Diego, but we did have them when I was growing up in Northern CA. Now that I think about it, I don't think my kids have seen a wild deer except for a visit to the Yosemite Valley...
    Now to the cookies... WOW!! Funny, Almond Joy's were the one candy that I pulled out of my Halloween bag to give to my dad (he loved them!). I never really liked coconut until I was in my 40's, and now I can't get enough of it. These are a must try!!!
