No Worry, No Knead Bread

Bread making can be frustrating and labour intensive, especially if you don’t have a mixer with a dough hook to help with the kneading. Achieving a crispy and crackly crust can also be difficult in a home oven. Because of these issues and more, most people refrain from making their own bread. Fortunately there is a method that involves only 5 minutes of actual hands-on involvement, requires no mixer and produces a rustic, bakery style loaf. It only requires 4 ingredients, a Dutch oven or other covered oven-safe cooking vessel and some time (lots of it). The great thing about this recipe (besides how easy it is and how great it tastes) is how versatile it is. You can switch up the type of flour and/or beer; add nuts, olives, oatmeal, herbs etc. and it will still come out tasting great. Be aware though, that the resting time for this dough is about 18 hours, so plan ahead.
Here are the ingredients and steps to making this amazing bread. Make it once, and you’ll be sold forever!

Ingredients:

  • 3 cups of all purpose flour
  • 1 teaspoon of salt
  • ¼ teaspoon of instant yeast
  • ¾ cup of your favorite beer, at room temperature
  • ¾ cup of warm water

Directions:


1. In a large bowl combine the flour, salt and instant yeast
2. Using a wooden spoon or spatula, mix in the beer and water. The dough will look wet and shaggy.
3. Cover tightly with plastic wrap and set aside in a warm place in your home. If it’s a hot day, the dough can be ready in as little as 12 hours, but typically the dough takes about 18 hours to be ready. It will be fine resting up to 24 hours.
4. Once enough time has elapsed, lightly flour a clean, smooth surface. Take the dough and give it a few tugs until it looks smooth and uniform in texture. Let it sit for 15 minutes.
5. Flour a clean dishtowel. Take the dough and form it into a ball. Place it seam side down on the dishtowel, and then cover with another dish towel. Let it rest for 2 hours.
6. With a half hour of resting left, place the empty Dutch oven (or medium sized, well insulated roasting pan with cover) in the oven and turn the oven on to 450 degrees.
7. When the oven has reached the required temperature, carefully take the Dutch oven out of the oven, uncover, and carefully slip the bread into the Dutch oven so the seam side is up.
8. Cover and place in the over for 30 minutes.
9. When the 30 minutes is over, uncover and continue to bake for another 20 minutes.
10. Remove bread from the oven and let cool in the Dutch oven for a few minutes, before carefully removing and resting on a cooling rack.  
11. Once the bread is cooled, slice and serve with your favourite accompaniments.

  18. We had to make a loaf of no-knead bread for homework in my baking class - I added a little grated candied ginger and lemon zest and it was unbelievably good. Just right for a quick easy breakfast!
