Do you feel the energy in the air lately? I love this early beginning of the Spring. Everything is blooming, trees are white, purple, yellow, pink. I can't wait for the real Spring time when nature truly wakes up.
- I know that I have many recipe of pizza on my blog but this one is just a bit different. I was in the mood for something light, but bit spicy, juicy, crunchy..and totally yummy!
I love tomatoes but on pizza it was not mind blowing. Arugula pesto was pretty satisfying..I am judging here food that I made, tried and wanted to see how this combination will work together. The best thing that pulled flavors was smoked mozzarella and spicy Arugula pesto..Overall I liked this pizza..I could eat it every once in a while, and probably will try without tomatoes next time or at least roast slices for few minutes before I place them on the crust.

- I made it a while ago and after I made it, arugula pesto recipes started to bloom all around the food web. Before I forgot, I would like to add that this was also one of the choices for my reader.
So here is the recipe for the pizza:

Ingredients:
dough:
makes 2 medium pizza crusts
- 2 1/2 cups All purpose Flour-without sodium
- 1 Tbs. Salt
- 1/2 tsp. Sugar
- 1 Tbs. Dry Active Yeast
- 1 1/4 cups Luke Warm Water
- 1 Tbs. Olive Oil
Topping for each pizza:
- 8 slices of smoked mozzarella
- 8 slices of Tomatoes
- 1/2 tsp. Red Crushed Pepper
Pesto:
- Handful of Arugula
- 2 Tbs. Olive Oil
- Pinch of sea salt and freshly ground pepper
- 2 Garlic cloves (or more if you like)
- 6 Almonds, unseasoned
Directions:
Dough:
- In a cup put 1 tbs flour with sugar and dry yeast; add warm water and mix. Allow yeast to activate.
- Combine flour with salt; stir.
- Once the yeast is activated put it together with the rest of the flour (w/ salt) and add olive oil.
- Pour the water in slowly. (Sometimes if you don't measure the flour (if you eye ball it) you can put more than enough water. 1 cup to perhaps 1 1/2 would be enough for this amount of flour but you can adjust more or less you will see once your start making the dough.)
- Try to mix it with the wooden spoon than knead with your hands because you will get the best results.
- Cover and let it rise for the next 45 minutes in the warmest place in the kitchen.
- After 45 minutes take the dough out and cut in the half.
- Roll it out to the size of your pizza baking sheet.(this is great workout!!!)
Topping:
- Cut the tomatoes and cheese really thin and place it on the side for later use.
Pesto:
- In a food processor put Arugula and all the other ingredients.
- Pulse until everything is combined.
Arrangement:
- Spoon pesto onto the pizza crust that you rolled out.
- Put one slice of tomato, one slice of cheese and so on until everything is gone.
- Preheat the oven on 400 degrees Fahrenheit.
- Bake until the crust is darker on the bottom and cheese getting nice bubbly golden color (About 20-25 minutes).

Gorgeous pizza! I have some arugula in my fridge that needs to get use. I might have to try making pesto with it this weekend!

ReplyDeleteI can never get enough of pizza variations, so I am glad you posted this. It does make me think of spring with all those vibrant veggies on top!
ReplyDeleteI have yet to enjoy a pesto pizza, but this does look like something that I need to make and soon. What I do not see on here is any trace of the grease that comes from processed meat..will not be missing that! Enjoy the day.
I do feel the energy in the air and I am loving it! I mean come on, what is not to love? The birds chirping are my favorite.

ReplyDeleteYou can never have to many pizza post in my opinion. This looks and sounds amazing! Love smoked mozzarella and I never use it enough. I'm so ready for some sunshine I swear it has been non stop rain here in Seattle. Oh and we had snow a couple of days ago ugh!

ReplyDeleteI really, really need to try one of your pizza. Every time your pizza comes up on the post, I say the same thing. Don't give up on me yet. I'm always believing that your pizza is delicious! Once it gets warmer I'll try making pizza dough from scratch. I had made dough before and never rose because it wasn't warm enough (??) and I'm really paranoid about dealing with dough. Everyone says it's easy but I haven't felt that yet whenever I make dough... something I need to be comfortable with. It's always so stressful. Silly right? Anyway, thanks for making me hungry before even 10am...

ReplyDeleteLoving this, Sandra. So spring-like with the argula greens and can just imagine with the smoked mozza. Great idea with the pesto: I added a few argula leaves to a pizza once and my daughter (who hated any kind of salad) started to eat it simply as we told her she had to eat it like an Italian! She'd love your version. We're also enjoying warmer temps at long last. Phew. We're all finally coming outdoors like Paris mushrooms.

ReplyDeleteme, too! i love this early beginning of spring! it's a hopeful season for me because of the anticipation...and people start coming out of 'hibernation' - walking around, wearing fewer layers, becoming more active outdoors...and this pizza is a nice little intro to the lighter, fresher foods we eat in the spring / summer season! very nice!

ReplyDeleteI know you said the tomatoes on the pizza weren't mind blowing, but that would be my favorite part. There's something about tomatoes and their delicious mild flavor that makes me say YUM! Then when you add sun dried tomatoes it's bright and bold! Tomato sauce...different again! I'm a fan and this is a beautiful pizza!
