Sweet Coconut Buns

Happy Monday and beginning of the week guys,
How was your weekend? Mine was fantastic..Finally, I got out and planted some amazing vegetables such as tomatoes, peppers, cucumbers, cabbage est. and of course strawberries, blackberries and raspberries..can't wait until everything is ready for harvesting...however garden wouldn't be a garden without herbs, so we got some herbs planted as well..I have to make some photos so I can show it all to you..Anyhow today post is something sweet and healthy if eaten in moderation..right?! Could you resist these?
I had my eye on Roxana's (A little bit of Everything) Coconut Buns for a while now. I love sweet rolls and I love coconut so Roxana's recipe was absolutely amazing. I do regret that It took me almost a year to make these beauties. Even though I loved Roxana's recipe very, very much (and I do recommend her recipe without a doubt, because I tried it and loved it), second time when I made them,  I used Orange zest in the dough and made them just a little different. 
I am on the raw diet for almost a week which I will be talking about soon, but I had a chance tasting them before.. this time my kids went bananas for these buns and I have feeling that you will too. 


Delicious and simple recipe for Sweet Coconut Buns


Simple recipe for homemade Sweet Coconut Buns
Makes about 12 rolls
Ingredients:
  • 3 1/2 cups All purpose Flour
  • Pinch of Salt
  • 4 1/2 Tbs. Stevia
  • 1 cups Coconut Milk(more only if needed)
  • 1/2 cup Luke warm water
  • 1 Tbs. Dry Yeast
  • 1 egg
  • 1 Tbs. 100% Pure Organic Coconut Oil
  • 1 Orange
  • 1/2 Tbs. coconut Oil for greasing
Garnish:
  • 1/2 cup coconut Flakes
  • Orange zest
Directions:
  1. In cup put Luke warm water, pinch of sugar and Yeast; let the yeast get active(When  it's bubbling it's active)
  2. In the large bowl add Flour, Sugar, and salt; Stir.
  3. Mix egg and add to the flour mixture together with activated yeast,
  4. Pour warm to touch coconut milk slowly and with wooden spoon stir until it starts to form a thick dough.
  5. Add just a bit of Orange zest (from about 1/2 of the Orange) in the dough and combine it all together with coconut oil.
  6. Knead the dough with your hands and form a dough ball. 
  7. Cover the bowl and let it rise for next 45 minutes(or more) in warm area.
  8. Once the dough has risen up start taking the little dough balls (the size of your Palm); Roll it and before putting in the baking pan make a little balloon by tucking the bottom part and pulling it down so you will have nice round and even on the top bun.
  9. Place them in the pan and let them rise for next 15-20 minutes. 
  10. Just before I put them in 400F preheated oven I brushed each bun with the freshly squeezed Orange juice, than with 1 Tbs. of coconut oil that I melted and saved it just for brushing.
  11. Bake for 35-40 minutes and when it's done sprinkle with some extra coconut flakes and/or extra Orange Zest..but it is optional!
  12. Let it cool down for 20 minutes before serving - if you can wait that long!:))
*You might say or ask me how these are healthy?..well, I used stevia instead of the sugar, coconut milk instead of the my usual skim milk, and 100% pure Organic coconut oil instead of the butter or any other oil. There is also an Orange for little kick from the Orange zest oils too...so If you take one bun it's not that bad after all! :))

  13. I love these! Before I scrolled all the way down, I was thinking, this would be perfect with chocolate! Great recipe, I would gladly eat a whole batch of these by myself. And I'm jealous of your nice weather. Here it's been cold (for Middle East standards) and almost constant sand storms. Hope you enjoy your week!

  33. Dont you love spring? There's nothing so satisfying as getting the garden started. Unfortunately we're a month or so away still. Guess we'll just have to pass the time noshing on these delicious buns... and with Nutella, no less. Too good!
