Lavender Scones

Homemade recipe for Lavender Scones

A few weeks ago I got a Lavender from Lavender World and wanted so badly to use it for my cooking experiments..I never cooked with it and it is something totally new to me. I turned to Sam for a recipe. She responded with an amazing "Lavender Scones" which they are serving/selling in their tea room at Yorkshire Lavender
I never made this kind of scones and they were unbelievably delicious. I sent her a photo and she send me link how scones tent to look in England (round) ..but I should of ask before I made them for this post. I am not regretting because they are so darn good! 
Once I pull them out of the oven, my whole place had soothing aroma of Lavender. 
I prepared everything to make some more for today's afternoon snack.


Ingredients:
adapted from Lavender world
  • 4 cups Self-Raising Flour(pr Flour + Baking Soda)
  • 4 Tbs.  Earth Balance Vegan Butter
  • 1 cup Caster Sugar
  • 1/2 Tsp Dried Lavender (from Lavender World)
  • 1 1/3 cups Milk (or enough to make a ball)
  • 1 egg for brushing
Original recipe:
Lavender Scones - Makes 2 dozen large scones
900g / 2lb Self-Raising Flour
175g / 6oz Butter
175g / 6oz Caster Sugar
2 tsp Dried Lavender
300-350ml / ½ - ¾ pt Milk
Directions:
  1. Combine flour, sugar and lavender into a mixing bowl and rub in the cold butter. 
  2. Add enough milk to form a soft dough (for me was 1 1/3 cups enough) and knead.
  3. Roll out to 1in thick. 
  4. Cut into wages and place on a floured baking sheet.
  5. Brush with a beaten egg.
  6. Bake in a preheated oven at 400˚F / 200˚C  for 20 minutes until they are risen, and golden. 

My thoughts and prayers are going to those that lost someone in latest Tornado that went through my area too. Thankfully didn't do any damage which would be devastating if it did especially after Nashville flood in 2010. However many did lose everything so see if you can help in some way through your Church, Community or Red Cross

  13. What lovely scones! I can imagine that the lavendar gives them a subtle floral flavor. I picked up some lavendar salt while in Seattle a couple of weeks ago and have yet to figure out how to use it.

  16. Och, Sandra; this is when I wish I lived in the States for some heat and sunshine and lavender. Today my face was taken off with the chilly winds by the Seine but boy, I'm waiting for the summer to make these scrumptious looking scones of yours. Thanks for the ray of sunshine!

  17. I’ve never cooked with lavender before and you are so brave for giving it a try. I remember my brother in law uses the lavender leaves to marinate his chicken. I had some lavender plants, but they were kinda out of control. I need to replace them for new ones this spring. And then I might feel brave enough to use them in my cooking as well.

    Your scones look wonderful and I bet they will taste pretty good with some homemade lemon curd!

  18. I love baking with lavender, it does leave an amazing smell in the kitchen. You can also use lavender in savory dishes, French people do. The scones look great Sandra. Glad to hear you are okay, my thoughts are with the victims.

  41. I have three giant hearty lavender bushes in my garden, would I be able to substitute (Im sorry - I know you are talking about the one you just got >< ) fresh lavender for the dried?
