Love is in the air: Blueberry Mousse

Hello my friends,

Are you covered in snow or the weather in your area is just like beginning of Spring? I can't believe that we had last week around 70 degrees Fahrenheit..it sure is crazy weather!

I love February, it is month of love! My husband had his Birthday on February 1st and mine is on 10th, Valentine's Day on 14th..so I do get carried away in February with sweets even though I don't overeat especially now when I try to cut on the sweet as much as possible...
I made Crepe Cake with Nutella for my hubs B-day..it was divine, no it was more than divine and I am making it every single year just because it's his favorite cake.(Ok it's one of my fav too.. I had a little piece and spoonful of nutella..don't judge me - I had to have something sweet after a few weeks of no chocolate/sweets at all)
However just a day before the Crepe cake I made this dessert that I fell in love with. It is naturally sweet but I added just a bit of Stevia, and for this mousse I didn't use too many ingredients..and on the end the dessert was really delicious, light and satisfying!

Serves 2 (lovebirds)
Ingredients:

  • 1/2 cup Heavy Whipped Cream
  • 1 cup Blueberries
  • 1 Tbs. Vanilla Yogurt
  • 1 Tbs. Stevia

Garnish:
  • Blueberries

Blueberry Mousse..Perfect, delicious and so creamy

Directions:

  1. Blend the blueberries and yogurt
  2. With electric mixer make a whipped cream, and add a Stevia. Mix until mixture is stiffed.
  3. Add Blended blueberries and yogurt into whipped cream.
  4. Fold with a spatula.
  5. Take a bottomless heart mold and put on the plate and with a spoon fill the heart.
  6. Put in the fridge for 30 minutes before serving.
  7. Remove the mold slowly and garnish with a fresh blueberries.
This could be perfect dessert for the Valentine's day even though it's not red or with chocolate!:)

Hugs for all!!!
Your friend,

                              Sandra

  3. The blend of fruit and dairy makes for a tasty dessert! I really do not think that fruit requires much sugar because it is already sweet. I love the presentation here, very inviting. Delicious creation here-well done.
