Chocolate Rock Cookies

Happy Monday everybody..I've joined the group with fab bloggers over at Jennifer's site "The Three little Piglets" for her fun event "12 days of Cookies". I came up with this one just for her event and I hope you do check it out! 
My cookies are perfect for any time of year, perfect for breakfast or snack with milk, tea or coffee..and to tell you honestly they taste better than they look!:) 



Makes about 15 cookies
Ingredients: 

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup ground Almonds
  • 1 tsp. baking powder
  • 1 Tbs. soft unsalted butter, plus extra for greasing
  • 1/2 tsp. Pure Vanilla Extract
  • 1/4 cup Skim milk
  • 1 egg, room temperature
  • 2.2 oz Hershey Chocolate (1/2 the 4.4oz)
Directions:


  1. In a large mixing bowl cream the egg and butter together. 
  2. Add vanilla extract, milk and sugar and blend well. 
  3. Slowly add flour, baking powder and ground almonds and mix until well combined. Using a spatula, stir in the chopped chocolate.
  4. Make a thick, long roll. Spread out some plastic wrap or foil and spray lightly with nonstick cooking spray just a bit before putting the dough on it.
  5. Wrap the foil tightly around the dough and place in the fridge for 30 minutes (or overnight and use when ready for baking).
  6. Preheat the oven on 375F (190C).
  7. Take the dough out of the fridge and grease a baking pan.
  8. Cut the prepared dough roll into ½” rolls, and place on the prepared baking pan.
  9. Bake for 25 minutes or until they are golden brown.
  10. Serve warm! Preheat a bit in the microwave for later use.



*Note: Usually you don’t have to roll and cut this kind of cookie. You can simply grab it with a spoon and place right on the baking pan. It is up to you which method you will pick to use!

  9. Sandra, These nice-sized cookies are beautifully presented. In particular, I like the addition of ground almonds and the yield of 15...sometimes a tad more than a dozen is all that's needed. Season's greetings to you & yours!
