Recipe that I have for you all is one of my favorites. There is many versions and this is mine that I've been making for a long, long time. I give you two recipes in this post; one is these little sausages that are called Ćevapi (tɕɛv̞ǎːpi) or ćevapčići and the other one is pita bread or flat bread. Traditionally this dish is very popular in every country in Southeastern Europe or Balkan as well as countries that are bordering Balkan such as Romania, and small parts of Turkey and Italy. Ćevapi and flat bread that we call "lepinja" (le-pi-nia) are just do not go one without the other. Onions or Green onions are also match made in heaven because it give you an extra kick--trust me on that one!
So this is what I have been doing whole Saturday at my in- law's house..grilling with my beautiful family!!!
Sausages in a Flat Bread- Ćevapi

- Mix it very good with your hands and add salt, pepper and egg, crumbs and baking soda. Combine it all together and pour oil on top.
- Cover the bowl with a plastic wrap and let it rest in the fridge for 1 hour.

- Let it rise for 45 minutes.
- Preheat the oven on 400F(200C)
- Take a small handful dough ball.
- Roll or with your hands make a dough round, then press with your hand to make a thinner dough disk on a already oiled baking pan. You can make as big as you want, but let them be flat because the crust will rise more when you put in a preheated oven.
- Bake until they are golden brown, about 20 minutes.

A similar to this one recipe (again with sausages, but simply slightly different ones) is also one of my favorites! So I suspect I will absolutely love this one. In any case, it couldn't look any tastier -- it reminds me of the summer days at the seaside in Bulgaria where I would eat with friends in small traditional restaurants :)
ReplyDeleteOh how I love cevapi! :) So many memories of childhood barbecues in our garden... cevapi are a grill staple in Germany, for some reason, so I associate many a happy childhood feeling with them.

ReplyDeleteI've spent the past two days cooking for thanksgiving and now that the bird is finally in the oven I'm sitting down to catch up on blogs....and found this. And then I realized, I'm hungry for real food. This looks satisfying. Unbelievably, deliciously, satisfying.
ReplyDeleteI love your mici or mititei. I just buy the seasoned ground pork at the city market because I am fortunate to live in a very ethnically diverse city. Do you make minciunele as well?
ReplyDeleteThese are best if you use either beef or mix beef, pork and lamb..Personally don't like them with pork..minciunele, yes I do make them..not that often since they are fried, but my kids do love it!
