First I want to apologies for not being able to reply to all your wonderful comments, but I do read them all and they are putting smile on my face. I won't be able to blog as much as well visit all of you like I use to. I am taking care of my little boy who recently got injured (broke his foot)..hopefully you will understand my position and my loving duties as a mom.
Today's recipe I've got from one book called "The Complete Book of Main Courses" by Jenni Fleetwood. I love this book, because it has many different cuisines, and I am trying to experiment with many...of course with my twist in all of them.
It is very flavorful and delicious grilled food, in different style.
These Japanese-syile kebabs, are served with yakitori sauce for dipping. They are really perfect for entertaining guests, very easy and fast. I would recommend for more authentic, serve it with Japanese condiments. These will surprise you how tasty they are!
Adapted from "the complete book
of main courses"
Serves 4
Ingredients:
- 8 Chicken thighs with skin and bones.
- 8 large and thick spring onions
For Yakitori sauce:
- 2 Tbs. (30ml) Sake
- 5 Tbs.(75ml) Soy Sauce
- 1 Tbs. (15ml) Mirin
- 1 Tbs.(15g) Superfine(caster) Sugar
To serve:
- Shichimi togarashi (chili pepper), or lemon wedges, Toasted sesame seeds *optional
Directions:
1. First make yakitori sauce. Mix all the ingredients together in small pan.
Bring to boil, than reduce the heat to simmer for 10 minutes, or until the sauce has thickened.
On the end I added about 1 Tbs. of sesame seeds and sprinkle of chili peppers for the dipping/serving bowl.
2. Cut the chicken into 1 in (2.5cm) cubes, and spring onions into 1in (2.5cm) long sticks.
3. To grill (or broil) preheat the grill(or broiler) on high. Oil the wire rack and spread out the chicken cubes until the juices run out. Grill on both sides . Than dip the pieces into the sauce and put back on the grill. grill for about minute on both sides and repeat the dipping process one or two more times.
4. Set aside and keep it warm.
Gently grill onion until soft and slightly brown. don't dip the spring onions.
Arrange them on the water soaked bamboo skewers and put them back on the grill for about 2 minutes. You can do this alliteratively right away put them on the skewers, but I liked the crunchy sesation of the chicken when I cook them separably. Also after you arranged them on the platter or individual plates, sprinkle with some chili peppers, and serve with lemon wedges.
Taste is sweet, sour, salty..just great flavor all together.

*Mirin: is an essential condiment used in Japanese cuisine, consisting of 40%–50% sugar. It is a kind of rice wine similar to sake, but with a lower alcohol content—14% instead of 20%. There are three general types. The first is hon mirin which contains alcohol. The second isshio mirin, which contains alcohol as well as 1.5% salt. The third is shin mirin or mirin-fu chomiryo (mirin-like seasoning), which contains less than 1% alcohol yet retains the same flavor.

My little guy broke his femur last year so I can definitely relate to the mom mode you are currently in. I will be back at it once again as he has surgery once again on his femur in September. Take care of yourself and your little guy and I hope he has a speedy recovery!

Oh no! I hope your little man is okay. They're so active. Mine is still under two, but I can imagine as he gets older, I'll be nursing some major scrapes and bruises.

ReplyDeleteSecondly I think everyone will understand you putting your little guy first. My son broke his leg playing soccer when he was young. Was a long 6 weeks with the cast. My daughter tore her achilles as a teenager and was out of commission for about 2 years. Spend every moment you can with him, he'll appreciate it. We'll still be here when he is healed. Much love. xx
