These little sweet rolls came out today so good, I really need to be removed from kitchen physically because I can't stop eating. I have to workout double just to burn all those calories. However they are truly irresistible. I think my kids will love it once they see this for after school snack! They are warm on the inside, and the chocolate is simply melting along with the roll in your mouth. I mean it is #1 sweet pastry in my household. Try it and you will absolutely love them too!
Ingredients:
- 4 cups of all-purpose flour
- 1 tsp. salt
- 3 eggs yolks
- 3 Tbs. sugar
- 1 Tbs. dry yeast + pinch of sugar + 1/4 cup of warm milk
- 1 cups of warm milk *I used this time coconut milk
- 1 Tbs. Butter (unsalted), melted for brushing the buns/rolls
- 1/2 cup of powdered (confectioners’) sugar for the dusting optional*
Filling:
- Chocolate but varieties are endless-jam, nutella, cheese
Directions:
- Combine flour and salt.
- Mix eggs and sugar until lightly creamy and add to the flour. (You can use hand whisk as it doesn't have to be perfectly puffed up creamy form)
- Let the yeast get activated by putting together warm milk, yeast and pinch of sugar, once active add it to the flour;
- Add warm milk and knead the dough!
- Sweet dough should be firm, as you form into the ball (it shouldn't be too sticky) and let it raise for about 30 min. Knead the dough one more time and cover for 10 additional minutes.
- Once you see that the dough is ready, take it out of the bowl and spread out on your working area; cut it into squares or circles like you would normally do for doughnuts and put about 1 teaspoon of chocolate(cut it roughly with the knife) in a middle of each dough piece; fold them and as you folding make into a ball.
- Place it on a parchment paper or just grease the baking pan; brush melted butter and let it raise one more time..I would say about 15-20 min.
- Bake it on 350F(180C) for 30-35 minutes, or until golden brown.
Once they are baked brush again bit of butter and dust them with powdered sugar.Let it cool down for a few minutes before serving!

Yes dough can be refrigerated. What you need to do after it rises, cover with plastic foil. For me the best way was to put in a plastic container or large bowl and just cover so the air doesn't get in. Take it out of the fridge at least 30 minutes before and just let it rise again. I have to tell you honestly that I love to work with a fresh dough but I did refrigerated few times before and it came out beautifully! Hope it will work for you! Thanks again!

Those looks fantastic. What a fun treat for kids to bite into and find all that chocolate goodness inside. I bet if you filled it with some caramelized apples, you could even do a cinnamon sugar topping.

ReplyDeleteIn the ingredients list you have mentioned 3 eggs yolks, so does that mean you only use the yolks in the above recipe?
DeleteHi RS, Yes! I used only 3 egg yolks in this recipe. Of course you could use whole egg but read bellow difference:
Egg yolks are the fat in the egg and act as a bridge between other ingredients in bread, allowing other fats to combine with moisture. Fats can be natural fat in the flour or added in the form of oil, shortening or butter. Without this emulsifying action, the yeast breads dry out very quickly because the moisture in them has not been linked to the fats baked in the bread.
Many yeast breads with egg yolks added also have sugar to further soften the texture, producing a cake-like concoction. Examples of egg breads include brioche and challah
Egg whites do not have the emulsifying power of yolks. Instead, egg whites dry bread out to create a crisper texture. This occurs when the proteins in the egg whites cook as the bread bakes.

Oh if you make them please do let me know how they turn out for you. One more thing if you don't have coconut milk, any warm milk will do, just pour little bit at the time to see if it's too much..you can add more than 1 cup but all together this recipe using 1 1/4 cup of milk so I think that should be enough on 4 cups of flour to form nice dough ball. :D
