Stuffed MeatBalls with Cheesy Rice- Onion rings and Corn on the Side

If you asked me if I made this recipe before I would tell you that I never ever did it!
However I am so glad that the idea came into my head. These meatballs are not your ordinary, and perhaps somebody would think it is crazy idea but was it tasty..well it was my tasty crazy idea!:))
When my husband woke up, yes he works at night at Children Hospital and sleeping until lunch time:) So when he got up and asked me "what is that smell coming from the kitchen?" even he thought it was crazy idea, but once he tried it, hmmm that was different thought for a moment..he said it was amazing, and I could not agree more!



Ingredients
for 6 meatballs:
  • 1Lb of lean ground beef
  • 1/2 onion, grated
  • 1 grated carrot
  • 1 grated celery stick
  • 1 cup of Italian bread crumbs
  • Freshly grounded Italian Herbs
  • 1 teaspoon of red paprika
  • 1 teaspoon of Vegeta OR
  • Mrs. Dash-original blend
  • 1 teaspoon of ground black pepper
Filling:

  • 1 cup of cooked rice
  • 2 Tbs. Philadelphia cooking cream
  • Handful of shredded cheese
  • Stir and that is filling

Directions:
  1. I a large bowl mix all the ingredients except the bread crumbs
  2. Preheat the oven on 375F
  3. Dip your fingers in oil and take a handful of meat mixture, and make a pattie as large as you can.
  4. Take a teaspoonful of rice mixture and put it in the middle
  5. Slowly put the meat patties to the middle and make a ball
  6. Close all the open holes, and roll into real ball.
  7. Once your finish making them, put the ball in the Bread Crumbs and on the baking sheet
  8. Bake for about 20 minutes/or 30 depending on you oven.
  9. My shortcut was that I used Alexia onion rings with Panko breadcrumbs-than I baked it in the oven and grilled my corn.

This may seem unusual but it was really tasty!

  1. OK---I'm liking this idea! We were on the same page apparently, I made turkey and rice meatballs last night for dinner! They turned out yummy too. I can't wait to try this one out---hats off to you Sandra!!!

  12. A friend of mine makes cheese-stuffed meatballs, but I've never had them stuffed with rice and cream cheese - sounds interesting! I may have to try this.

  19. I made some onion rings yesterday but my breaded chicken cannot compete with your delicious filled meatballs! What an creative and yummy idea there Sandra :) The whole plate looks amazing and mouthwatering. Your hubby is one lucky man, waking up on delicious smells coming from the kitchen! It is just too bad we have bad weather again in Nashville :(

  20. Hi Sandra! Hm my question is if you cook this for lunch...then what's dinner!? LOL. You family is so lucky! I sometimes put a quail egg, a cherry tomato or mushed potato isnide the meatball. I just like when my kids find what's inside and gets excited about it. I eat rice almost everyday but didn't realize rice as an option. Totally cool!

  27. Često sam ih punila sirom, ali ih nisam nikada pekla, što je možda i bolja varijanta jer ovako kada se prže uvek iz neke procuri malo sira, a ovako je i zdravije. Bravo!

  47. I've never made meatballs stuffed with rice, on the other hand, I made rice stuffed with meat, which is the "rice balls" but I want to make this soon. So delicious and tempting. Love the onion rings too.
