I had some pita pockets, and few of the different veggies..along with just a 1/2 cup of mac 'n cheese and my lunch turned into amazing and delicious meal!
Ingredients:
- Salmon
- (I used 3 oz for 1 person)
- Carrots
- Three Peppers
- Red onions
- Green Salad
- Scallions(green onions)
- Fresh Parsley
- Whole wheat pita pocket
- Hot and Spicy Sandwich Mayo
- Herb Part Skim Amish soft Cheese
- (3 small slices per person)
- Lemon juice
- Salt and Pepper
- Olive oil
Directions:
- Cut all the veggies.
- Bake Salmon on nonstick aluminium foil with:
- lemon juice, salt and pepper, rub bit of olive oil and bake on 375F for 20 minutes( if the fork is going through the fish easy that tell you it's done)
- Stuff the Pita pocket.
For Mac 'n Cheese
- Boil salted water and place Rotini pasta or any that you have on the hand.
- Drain
- Put Ragu Pasta Cheese Sauce
- Stir
- Sprinkle fresh parsley and carrots on top
And there you have healthy yet comforting meal in less than 30 minutes.
