Few days ago, I was wondering what else would be great to make out of the mashed pumpkins. That morning I made waffles for breakfast and had some leftovers. Idea came to my mind to put them together with pumpkin whipped cream. Just to let you know that I have never ate pumping whipped cream..and I was pleasantly surprised, it tasted really good!

For 1 serving

  • 3 regular waffles 
  • 1 ½ cups of heavy cream
  • 3 Tbs. of mashed pumpkin- ready to use
  • 2 Tbs. of powdered sugar
  • ½ Tbs. vanilla extract
  •  bit of maple syrup on the side *optional

  1. Mix the heavy cream; slowly add sugar (you can taste to see if you need more sugar). When you see the peaks heavy cream is ready for the next step. 
  2. Add the pumpkin along with vanilla extract and combine it well.
  3. After that, just start layering the waffles. You can decorate either with decorating kit or just with spoon or knife.
That was so easy, and delicious. The smoothness of the sweet pumpkin whipped cream and soft waffles will give you an amazing taste. This individual little treat could be great idea for Thanksgiving breakfast!
